Homemade Black Bean Veggie Burgers

These are some mighty fine veggie burgers. I used red pepper instead of green because I like them better. I also added a bit of tomato paste for the taste and texture. Delicious with basil mayo, avocados and tomatoes. Who needs hamburgers!!!?

Black Bean and Corn Quesadillas

So tasty. I just made these for lunch with minor changes. I cooked the onions for a couple of minutes then added a clove of minced garlic. I used fresh corn and homemade salsa. Also added cumin to the bean/corn mixture and stirred in a couple pinches of salt just before serving. Extra good with corn tortillas. This was a hit with everyone around our table. I think I might add pinto beans next time too.

Elegant Orzo with Wilted Spinach and Pine Nuts

I can't get enough of this. I made it for lunch today and wished for more when I was finished. I made it in smaller proportions since it was just for me and added some tomatoes roasted with olive oil, salt, pepper and garlic, and it was perfection. I prefer this with fresh parmesan rather than the feta. Seems that adding the pine nuts along with the spinach keeps them from toasting a bit too much. So good and so healthy. BTW, I barely wilt my spinach so plenty of nutrients remain, and I love it that way personally.

Orzo with Parmesan and Basil

I made this for lunch yesterday and served it with basil cream sauce. This was quite a hit! I added a clove of garlic along with the tomatoes and basil and used rotini and orzo. Tastes like summer. Next time I'll stir in some fresh tomatoes at the end.

Basil Cream Sauce

I made this for lunch yesterday and served it with Ozro with Parmesan and Basil from this site. I used soy milk rather than the cream and thickened slightly cornstarch. Very nice taste enjoyed by our entire family...even my 10-year old son who does not give in easily to the site of something green on his plate. My daughter happily ate the leftovers today for lunch.

Best Ever Butter Cream Frosting

Too Much Chocolate Cake

This is scrumptious. Moist, chocolatey deliciousness. I made double recipe that produced a six-layer cake. Filled each layer with chocolate ganache and frosted the whole thing with buttercream. Amazing. You won't be worry. Well, I take that back. You might be sorry because you won't be able to stop eating this. Mmmm!

Raspberry Vinaigrette Dressing

This is a lovely vinaigrette. I prefer olive oil and added 1 T. balsamic because I just couldn't help myself. Made a wonderful salad with sugared walnuts, cranberries, blueberries and spring greens. MMM!

Sarah's Applesauce

I've made this twice this week...once with galas and once with granny smith. I prefer the granny smith personally, but both were delicious. I used slightly less water...just so the apples were not quite covered. So good with Potato Latkes I from this site.

Potato Latkes I

Everyone in our house loves these. I shredded everything (rather than grating). Used a whole sweet onion, added carrots. Put potatoes into cold water in my salad spinner until ready to use. Drained the water and then spun them dry. Worked beautifully. Used whole wheat flour and 2 eggs for 2 cups of potatoes. Made these with Sarah's Applesauce, and it was a big hit.

Cilantro-Lime Dressing

This is so delicious that I can't get enough of it. I leave out the jalapenos and add an extra clove of garlic. The taste is fresh and light and so very good. I highly recommend this one.

Andrea's Pasta Fagioli

My favorite soup! So Italian. So good. Made only these slight (and very delicious) adjustments. Substituted 5 c. chicken broth and 1/2 c. red wine in place of the water. Used crushed tomatoes instead of tomato sauce. This kept plenty of liquid while adding texture. Added fresh italian parsley and basil just before serving. And added the pasta to individual serving bowls rather than the entire pot of soup to prevent it from soaking up all of the liquid. So simple and good. Our entire family enjoyed this, and I'll be making it again and again.

Garlic Mashed Potatoes Secret Recipe

These are truly the BEST mashed potatoes in the world. My son begs me to make them. The only change I make is to boil the garlic along with the potatoes and then blend it in when I mash the potatoes. Much milder and deeper and so delicious.

Make Ahead French Toast

Our new favorite. My daughter and I made this for Father's Day breakfast, and it was quite a hit. I thought it might be overly sweet, but it was perfect. The only change we made was to cut the bread in cubes to ensure even cooking. Served with balsalmic berry compote...scrumptious.

Annie's Fruit Salsa and Cinnamon Chips

I love this, and it's a hit whenever I take it somewhere. I mix the sugars and jelly together separately and then add some orange zest and a little fresh orange juice before pouring all over the fruit. So good. Makes my mouth water just thinking about it.

Delicious. Followed the recipe to a T and it came out perfectly. I've used this to ice a cake, as an ice cream topping, to make truffles, and as a drizzle over coconut macaroons. It's always perfect.

Deep Dish Brownies
