Quick and Almost-Professional Buttercream Icing

Perfect for frosting a birthday cake. Make sure you freeze the cake first. If you are cutting shapes, spread a first thin layer, let the icing harden (the beauty of real butter!!!) and then, spread another layer to hide any crumbs. MUCH much tastier than royal icing.

Addictive Sweet Potato Burritos

AMAZING! Freeze like a charm. I wrapped them in parchemin paper individually. Thaw in the microwave, then a few minutes in the toaster oven... voilà!

Gluten Free Crustless Pumpkin Pie

Amazing! Did 1,5 recipe to fit my spring pan... bad idea, it leaked a bit! Next time will make it in a deep pie shell. Serve with whipped cream.

Extra Gingery Bread

I used only 1/2 cup of sugar, 2 tps of cinnamon, whole wheat flour and orange juice instead apple. Absolutely delicious! Fit into 2 bread pans. Tends to burn before baked so next time will lower the oven temp.

This recipe is double the recipe "Triple the Ginger cookies", without doing the chilling overnight step. So if you wanna do half a batch, just switch to the other one!

Rhinelander Lentil Soup

To make it vegan / vegetarian, I used 1 smoked tofu block and added 2 tbs of oil extra. Double the carrots and the potatoes. I also used vegetarian beef broth cubes. Yummy winter stew!

Spicy Thai Vegetable Soup

This recipe depends a lot on your taste, so you must play with it. Personally, I thought that 1/2 cup of dry wine and 2 tbs of fish sauce was enough. I added a full package of diced firm tofu. I did not do the rice part because I prefer rice noodles. You can replace (although not as good) lemon grass with a full lemon zest.

Rice Cereal Energy Bars

SO SO SO YUMMY!!!! Don't forget the almond essence, that's the best part! I used Nature valley brown rice cereals. I trick, mix the grains and oat with the dry fruit, it prevents lumps and helps to stick everything together. Use parchemin paper instead of butter in a backing sheet. Use honey instead of corn syrup.

Moroccan Quinoa Salad

I find that 1 cup of quinoa is enough. I always rinse the quinoa thoroughly and then roast in a pan without oil or anything first. In a pot, cook as prescribed. I did the recipe as written and added diced red pepper and a few table spoons of oil. YUMMY!!!

Rhubarb Muffins

Possible to do with whole wheat. Just add about 1/4 cup of milk to the wet ingredients. Instead of vanilla yogourt, can do with plain and add a teaspoon of vanilla. I like to add zest of lemon or orange with rhubarb, it enhance flavours.

Crispy and Creamy Doughnuts

Had never donuts before and this recipe worked like a charm. Followed a reviewer's method in the bread maker. Pour everything in according to BM recommendations, set in dough cycle and remove when it has doubled (You need a 3lb bread machine). Roll and cut and let rise 25-30 minutes (about 1/3 of the size, not more). Fry and drain on paper towels. Dip in 2-3 cups of pure simmering maple syrup. Lay on a wire rack set on a cookie sheet to avoid the mess. DELICIOUS! Freeze well.

Muffin Pan Frittatas

I significantly changed the recipe. I used 2 cups of grated potatoes instead of asparagus. Like Naples34102 said, no need to fry the ingredient first. I just mixed everything and pour in 10 large muffins tins. It was quick and leftovers are great for lunches. Next time, I'll some herbs and garlic because I thought it lacked a bit of taste.

Beetnik Cake

Good cake but has an earthy taste to it. For a healthier version, I used whole wheat flour, half the sugar and a can of 14 oz of pineapple (instead of 8oz, to compensate for whole wheat). I also added 1 cup of sliced almonds. 60 min baking time in a Bundt pan.
