Old-Fashioned Pancakes

Excellent pancakes, very flavorful, and almost as easy as using a mix but SO much better! I followed the recipe exactly. Next time, I may try them with just a little vanilla.

Stan's Tuna Casserole

Creamy tuna casserole with just a little zing from the sour cream and plenty of tuna and mushrooms in perfect proportion. Crazy easy to prepare. For a little more zing, add a quarter to a half a cup of sliced pimento stuffed green olives.

Chicken Stew with Buttermilk Biscuit Dumplings

This recipe was awesome, very well liked by all. I took a couple of short cuts, used frozen chicken breasts cubed and microwaved, and cut up frozen biscuits instead of the dumpling recipe. Otherwise, I followed the recipe exactly and the results were wonderful!

Omelet in a Mug

This is a wonderful, easy recipe. I've been doing something similar to make a breakfast sandwich on a muffin or toast. For this, I just use one egg in a round or square microwave-safe container (as appropriate for the type of bread you use), lightly coated with Pam cooking spray. I'll scramble the egg in the oiled container then top with pre-cooked crumbled bacon or sausage and shredded cheddar. I also like to add a little seasoned salt or Greek seasoning. Keep in mind that, if you like more generous meat portions on your breakfast sandwich, it's best to cook them separately. The cooking time varies significantly with the ingredients you add. An egg alone is little more than 30 seconds while adding other ingredients can increase the cooking time up to a minute and a half. You'll be amazed how easy this is and how easily the cooked egg falls out of your plastic container! Warning! Be sure to break the yolk or you'll have a mess on your hands. Don't ask me how I know. ;)
