Skillet Corn Bread

The best corn bread I've ever made. Onion gave it a nice kick. I used light margerine and egg substitute and it turned out wonderfully.

Roasted Vegetables

Awesome, just awesome. I threw in an extra gold potato. We had this with the "Smothered Filet Mignon" recipe from this site and it made for a wonderful meal.

Red, White and Blue Slaw Salad

There were only two of us, and I wanted to trim the calorie content, so I made some modifications. Used 6 slices of "veggie" bacon, 3 cups of cole slaw mix, 1/4 cup of blue cheese, 1 cup of diced canned tomatoes and 1/2 cup of dressing (1/4 cup of fat free sour cream, 1/4 cup of light mayo). We enjoyed it. The combination of the bacon flavor and blue cheese was great.

BOCA® Tacos

I made this with one pouch of the burger, some shredded chicken and some added tomato sauce. It would've been too dry with just the 3/4 cup of salsa. Turned out to be a nice filling for soft tacos (used homemade masa-made soft taco shells).

BOCA® Breakfast Biscuits and Gravy

Smothered Filet Mignon

Wonderful meal. The vinegar/oil/mustard mix gave it a nice taste, but the carmelized onions and blue cheese were the key for me. We had this with the "Roasted Vegetables" recipe from this site and it was just an outstanding combination.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

We enjoyed this quite a bit. I used a 24 oz package of ravioli, which I boiled and drained, then cooked over an olive-oiled skillet with 1 T of onion powder until the ravioli browned up a bit. Seperately, I cooked the tomatoes, artichokes, onions and salt/pepper. Then I mixed the pasta into the vegetable mixture, minus the extra 1 t of olive oil. We usually eat the ravioli by itself and it's great, but this was a very nice change of pace.

Golden Sweet Cornbread

My wife, who is unfortunately a big fan of boxed cornbread, called this the best cornbread ever. I reduced the sugar to 1/3 cup and used applesauce instead of vegetable oil. Nice recipe.

Corn Tortillas

Pretty tasty tortillas. I had to add a bit of water after the original mixing, but I overdid it, so I added a touch of flour, etc. Didn't use a tortilla press, as I don't own one, but I did put the dough ball between two pieces of freezer bag plastic, then pressed it with the bottom of a skillet. Smaller and a bit thicker than the tortillas I'm used to, but storebought tortillas can't come close to the taste of this homemade version. I think they can be a lot better with practice, too.

Chicken Enchilada Soup III

This worked out really well. My wife, who is a huge fan of the Chili's soup, just loved this. I used 2% reduced fat chedder cheese, which helped trim a few calories, and the taste didn't suffer.

Sweet Corn Tomalito

I originally gave this 3 stars, but I'm bumping it to four. It's really grown on me, thanks to some suggestions. I cut the butter to 3T, the sugar to 1/4 cup (which still might be too much), skim milk, and I've used a can of creamed corn instead of 2C of frozen whole-kernel. Microwave method has worked great for me, though I've generally had to keep microwaving at 100% for longer than seven minutes. I just stir it every minute or so, then pop it back in, until it's the right thickness.

Grilled Chicken with Herbs

I eat a lot of chicken, so I'm always looking for new and healthy ways to prepare it. This was a solid recipe. Didn't have any fresh herbs on hand, so used dried. Vinegar gave it a nice taste.

Green Bean Salad

We really enjoyed this dish. I made a few changes-- Splenda instead of sugar (cut quite a few calories off), olive oil instead of vegetable oil, used some onion powder instead of onion (wife doesn't like onion texture), 1 stalk of celery and no added salt. It turned out great.

Pretty good stuff. We changed it up quite a bit to bring the calories down a lot. Used sugar-free pudding mix, fat free sour cream, skim milk. Nice change of pace.

Corn Casserole I

We've enjoyed this several times. We use 1/2 cup of egg substitute instead of two eggs, 1/4 cup of "light" butter, no cheese. Makes it a tad healthier and we still love the taste.

Buttermilk Pancakes II

Very good pancakes. I used buttermilk, though it was not "fresh" buttermmilk. Skim milk for the 1/2 cup of milk portion. Makes some sizable and tasty pancakes.

Banana Chocolate Chip Cookies

I made a few adjustments (1/4 cup sugar instead of 1 cup, low calorie butter, 2 bananas instead of 1, 1 cup chips instead of 2) to make them a tad healthier and they still came out great. I really enjoyed these cookies.

Overnight Raisin Oatmeal Pancakes

Very tasty pancakes. I used egg substitute, light butter, and it turned out great. Had to add a smidge of skim milk to get the desired consistency of batter. These went over really well.
