Irish Egg Rolls

We enjoyed these, though I wish I could've come up with a more creative dipping sauce than simple dijon mustard. Used the same shortcuts that others mentioned-- corned beef from deli, 2c of cole slaw mix, 1c of precooked/bagged shredded potatoes. Also, I did not fry them. Once I wrapped them up, I misted them with a bit of non-stick cooking spray and placed on a cookie sheet.....then baked for 18 minutes @ 425 degrees. A bit healthier than the deep-frying method, but tastes at least as good IMHO.

Banana Chocolate Chip Cookies

I made a few adjustments (1/4 cup sugar instead of 1 cup, low calorie butter, 2 bananas instead of 1, 1 cup chips instead of 2) to make them a tad healthier and they still came out great. I really enjoyed these cookies.

Green Bean Salad

We really enjoyed this dish. I made a few changes-- Splenda instead of sugar (cut quite a few calories off), olive oil instead of vegetable oil, used some onion powder instead of onion (wife doesn't like onion texture), 1 stalk of celery and no added salt. It turned out great.

No Sugar Added Cookies

Was hoping for more flavor, but most of the taste seemed to come from the butter. I didn't like them as a stand-alone food-- but they weren't terrible under some ice cream.

Grandpa Bob's Spicy Barbeque Sauce

Sweet Corn Tomalito

I originally gave this 3 stars, but I'm bumping it to four. It's really grown on me, thanks to some suggestions. I cut the butter to 3T, the sugar to 1/4 cup (which still might be too much), skim milk, and I've used a can of creamed corn instead of 2C of frozen whole-kernel. Microwave method has worked great for me, though I've generally had to keep microwaving at 100% for longer than seven minutes. I just stir it every minute or so, then pop it back in, until it's the right thickness.

Corn Tortillas

Pretty tasty tortillas. I had to add a bit of water after the original mixing, but I overdid it, so I added a touch of flour, etc. Didn't use a tortilla press, as I don't own one, but I did put the dough ball between two pieces of freezer bag plastic, then pressed it with the bottom of a skillet. Smaller and a bit thicker than the tortillas I'm used to, but storebought tortillas can't come close to the taste of this homemade version. I think they can be a lot better with practice, too.

Red, White and Blue Slaw Salad

There were only two of us, and I wanted to trim the calorie content, so I made some modifications. Used 6 slices of "veggie" bacon, 3 cups of cole slaw mix, 1/4 cup of blue cheese, 1 cup of diced canned tomatoes and 1/2 cup of dressing (1/4 cup of fat free sour cream, 1/4 cup of light mayo). We enjoyed it. The combination of the bacon flavor and blue cheese was great.

Apple Pecan Cornbread Dressing

I would have rated it higher, but my expectations were pretty high and it didn't quite live up to those. It's a nice dish with a unique taste, but it's not so much better than boxed stuffing that I would go to the trouble of making it very often.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

We enjoyed this quite a bit. I used a 24 oz package of ravioli, which I boiled and drained, then cooked over an olive-oiled skillet with 1 T of onion powder until the ravioli browned up a bit. Seperately, I cooked the tomatoes, artichokes, onions and salt/pepper. Then I mixed the pasta into the vegetable mixture, minus the extra 1 t of olive oil. We usually eat the ravioli by itself and it's great, but this was a very nice change of pace.

Roasted Potato Medley

Only had sweet potatoes on hand, so I tried this recipe with two of them. Just didn't bowl me over. As others have mentioned, I cooked them far longer than listed to get desired tenderness. Even then a few of the pieces were too crunchy. Didn't absorb the flavor like I'd hoped.

Corn Casserole I

We've enjoyed this several times. We use 1/2 cup of egg substitute instead of two eggs, 1/4 cup of "light" butter, no cheese. Makes it a tad healthier and we still love the taste.

Easy One Skillet Stroganoff

Turned out a lot better than I was thinking it would. Only changes I made were to use canola oil and fat-free sour cream. Frankly, the smell wasn't very appetizing before I mixed the sour cream in. But once the cream went in, it tasted pretty good. A nice, healthy dinner.

Smothered Filet Mignon

Wonderful meal. The vinegar/oil/mustard mix gave it a nice taste, but the carmelized onions and blue cheese were the key for me. We had this with the "Roasted Vegetables" recipe from this site and it was just an outstanding combination.

Golden Sweet Cornbread

My wife, who is unfortunately a big fan of boxed cornbread, called this the best cornbread ever. I reduced the sugar to 1/3 cup and used applesauce instead of vegetable oil. Nice recipe.

Skillet Corn Bread
