Mexican Corn

Reviewed: Dec. 19, 2004
Just way, way, way too hot for anyone in my house to consume.

Sweet Corn Tomalito

Reviewed: Dec. 12, 2004
I originally gave this 3 stars, but I'm bumping it to four. It's really grown on me, thanks to some suggestions. I cut the butter to 3T, the sugar to 1/4 cup (which still might be too much), skim milk, and I've used a can of creamed corn instead of 2C of frozen whole-kernel. Microwave method has worked great for me, though I've generally had to keep microwaving at 100% for longer than seven minutes. I just stir it every minute or so, then pop it back in, until it's the right thickness.

Overnight Raisin Oatmeal Pancakes

Reviewed: Dec. 6, 2004
Very tasty pancakes. I used egg substitute, light butter, and it turned out great. Had to add a smidge of skim milk to get the desired consistency of batter. These went over really well.

Roasted Potato Medley

Reviewed: Nov. 30, 2004
Only had sweet potatoes on hand, so I tried this recipe with two of them. Just didn't bowl me over. As others have mentioned, I cooked them far longer than listed to get desired tenderness. Even then a few of the pieces were too crunchy. Didn't absorb the flavor like I'd hoped.

Grilled Chicken with Herbs

Reviewed: Nov. 30, 2004
I eat a lot of chicken, so I'm always looking for new and healthy ways to prepare it. This was a solid recipe. Didn't have any fresh herbs on hand, so used dried. Vinegar gave it a nice taste.

Cafeteria Carrot Souffle

Reviewed: Nov. 28, 2004
Some liked it, some didn't. I didn't really care much for it. A bit too sweet for me.

Zucchini Bread II

Reviewed: Nov. 28, 2004
Not bad. But tasted a little more like a cinnamon raisin bread than a zucchini bread.

Corn Casserole I

Reviewed: Nov. 26, 2004
We've enjoyed this several times. We use 1/2 cup of egg substitute instead of two eggs, 1/4 cup of "light" butter, no cheese. Makes it a tad healthier and we still love the taste.

Buttermilk Pancakes II

Reviewed: Nov. 25, 2004
Very good pancakes. I used buttermilk, though it was not "fresh" buttermmilk. Skim milk for the 1/2 cup of milk portion. Makes some sizable and tasty pancakes.

Smushed Apples and Sweet Potatoes

Decent, but not as great as I was hoping it would be.

Chicken Satay

Reviewed: Nov. 23, 2004
A nice recipe. I mixed the chicken in with the Peanut Butter Noodles recipe from this site and it was well received.

Peanut Butter Noodles

Reviewed: Nov. 23, 2004
I enjoyed this. Used crunchy peanut butter and omitted the peanuts, whole wheat noodles and let it sit for a bit after the noodles were mixed in with the sauce. Nice taste.

Green Bean Salad

Reviewed: Apr. 26, 2004
We really enjoyed this dish. I made a few changes-- Splenda instead of sugar (cut quite a few calories off), olive oil instead of vegetable oil, used some onion powder instead of onion (wife doesn't like onion texture), 1 stalk of celery and no added salt. It turned out great.

Giant Chocolate Chip Cookie

Reviewed: Mar. 7, 2004
I used a 15x10 pan, prepared the recipe as listed (with the exception of the chips-- I used about 3/4 cup of peanut butter chips......also, didn't use walnuts) and it turned out really nicely.

Banana Chocolate Chip Cookies

Reviewed: Sep. 12, 2002
I made a few adjustments (1/4 cup sugar instead of 1 cup, low calorie butter, 2 bananas instead of 1, 1 cup chips instead of 2) to make them a tad healthier and they still came out great. I really enjoyed these cookies.

No Sugar Added Cookies

Reviewed: Aug. 30, 2002
Was hoping for more flavor, but most of the taste seemed to come from the butter. I didn't like them as a stand-alone food-- but they weren't terrible under some ice cream.

Banana Pancakes I

Reviewed: Aug. 6, 2002
I liked the taste. Used egg substitute, skim milk and applesauce (sted the veg oil) to cut down the calories a bit and they were still very tasty.
