Creamy German Coleslaw

This is exactly like my mother made (she was German and Pennsylvania Dutch heritage) but she taught me to quarter the cabbage head and then slice it VERY thinly on a diagonal line , place in a large sieve over a bowl to let water drain from cabbage, then refrigerates (about 1/2-1 hour), then proceed forward.I agree with JKH's recommendation )above or below) in that review. We used less sugar but I'm sure you can taste and adjust (as Chef John would say!).

Authentic Louisiana Red Beans and Rice

I made this for our groups monthly senior citizen luncheon. Most are from the South, and although we (the volunteers who provide this monthly luncheon) are not, at the end one elderly fellow said I had "earned a place in Heaven," because of this dish. I want some right now! Love Southern food!!

Cottage Cheese Chicken Enchiladas

Quick, easy and delicious! Even my husband, who is a picky eater, pronounced these "very good!" I added refried beans and used taco sauce instead of Enchilada sauce to avoid heat.

Roasted New Red Potatoes

Delicious and easy. Husband declared them better than French Fries. I added sliced and chopped white onion and a dash of garlic salt. Definitely in rotation here.

Chef John's Chicken Marsala

So GOOD! can't stop tasting the sauce as the chicken tenderloins (8) simmer. I did add a small pinch of Cayenne in tribute to Chef John and promised husband he has a great supper on the way, as he is out side gardening-we're preparing to raise our own vegetables due to expected crop failures in California. Whenever I want a recipe I always go to Chef John first! Thank you Chef John for a wonderful recipe.

How to Make a Tuna Melt

Delicious!! The first thing I ever ordered in a restaurant was a Tuna Melt when my Piano teacher and her husband took me out to a fancy place. They joked about my ordering a Tuna Melt-but hey I was a kid- what did I know? This recipe is perfect and better than the fancy restaurants version. Made it but actually had to explain to my Hubbie what a Tuna Melt was, haha. Guess we have had different life paths. But this is really good and now my Hubbie has been introduced to another Chef John Hall of Fame recipe and is a fan of Tuna Melts. Thanks Chef!

Chef John's Buttermilk Fried Chicken

Great!! Made this tonight as a dry run for a Senior Luncheon I am doing this Friday in San Francisco. Wow!!! This is really good chicken and fairly easy to make (unless you don't like getting your fingers globby with Buttermilk and Breading mixture, which in that case you shouldn't cook LOL). Am serving with Syrian Green Beans from this site and Greek Salad also from this site, along with rice and gravy.

Chef John's Italian Wedding Soup

Delicious. Made this tonight and it is so tasty. I had lots of greens in frig so used one 10 oz packages of Kale and 1 pkg Southern Greens from Trader Joe's with eggs, heavy whipping cream and bread. Made meatballs with 1 pound ground beef and one pound ground pork gently turning with a wooden spoon to incorporate. Now don't get mad at me Purists, but had to also use Herbs de Provence because because my Anise had walked away and I thought Herbs de Provence would do fine in the meatballs. Baked meatballs and added just before I served. Couldn't find Pastina at the fancy grocery store where I bought the Beef Shank but they did have tiny Italian pasta Alphabet things so added those. Strongly recommend using baking sheet for meatballs-used Foil and it was a mess until I rescued the meatballs to a baking pan. Since I am the only one here who loves pasta, now I have lots of meatballs for pasta which I will make and enjoy in secret.

Chef John's Salt Roasted Chicken

Excellent! The chicken was juicy and the skin crispy plus it tasted wonderful. Made exactly per Chef John but my chicken was a 5.25 lb organic chicken so roasted at 450 for i hour and 20 minutes, then lowered heat to 375 for another 25 minutes. When the legs moved easily I knew it was done. Sauce smelled great and was sooo tasty. Husband loved it saying it was so tender and good.(He had been afraid that my roasting a chicken at 450 would ruin it-haha!)Another home run from our Chef John!!

Chef John's Remoulade 2.0

Love this Chef John! I always find myself out of Tartar sauce when I need it and now I can just make it!! I am from the Northwest but now live in San Francisco. In the Northwest we have this on everything, but down here when I ask for it from the servers and they look at me like I am nuts or a smashed anchovy.

Lentil Soup with Lemon

A great starter recipe. I would give it 5 stars but I did use/add a lot of items and spices: 2 spicy sausages skin removed and chopped, several teeny tiny potatoes from Trader Joes, 1 can of top notch canned tomatoes whole (just cut them in the pan as they cooked), a tsp of sugar, 3 10 oz package of Kale plus 1 10 ounce package of spinach, cayenne and Hungarian paprika, extra salt as needed, also used chicken stock cause that's what I had. Super healthy and good. as recipece says use what you have on hand-so sure I did.

Black-Eyed Peas with Pork and Greens

Made this for New Years Day. Wow! Sooo good even my picky husband said "These are really good!" I made according to Chef Johns recipe only added a Ham Hock. The simmering pot smelled so good too! A keeper for sure.

Chef John's Truffled Potato Gratin

Making for Christmas Dinner. I am such a Chef John aficionado I goggled "incredibly cheap Chinese Mandolin" and got one for ten bucks from Bed Bath and Beyond. Found Truffle Cheese at my near by Mollie Stones. used jar thyme cause though I had the fresh but I just got lazy. 5 Russets made a lot of potatoes so we will have the rest tomorrow morning with sausage for breakfast. Now baking away and I love it!

Chef John's Ham and Potato Soup

Yummy. I added crispy shredded bacon and carrots and a few shrooms but otherwise totally followed recipe. BTW Chef John- how do you get an Art Major off your doorstep? Offer to pay for the Pizarro! Am not a smarty pants, just the mother of a San Francisco Sous Chef. When ever she is here (not very often as I an sure you know) and I yell for help she just walks in and says, "Oh mom just do this, " turns and walks out.
