Tuscan Soup

Wonderful soup. I used the Basic Chicken Stock recipe on this site and it was fabulous (using 2 or 3 Costco broiled chicken carcasses). Followed others suggestions by adding a can of cannellini beans and added garlic with the onion. Fabulous served with red pepper flakes and crusty french bread. Oh, I also used the whole small can of evaporated milk. A keeper for sure!

Squash Stuff

Very nice dish. I used Italian herb-seasoned crushed tomatoes and that kicked it up a notch for a great taste. I agree with another reviewer who said to use the liquid for bread dipping; draining the dish would be a waste of delicious sauce. Also, as mentioned before, use a very, very large skillet or a dutch oven. Thanks MRSHEIMANN for a good recipe.

Chili Beef and Corn Biscuits

Very nice Mexican-type dish. Great for a quick meal as there is not much prep...i.e., chopping, measuring, etc. Make sure you use a very large skillet.

Potato Casserole II

Very nice side dish. I substituted green onions for enhanced flavor and added Emeril's seasoning. Tried crushed cornflakes instead of the potato chips and it turned out great.

Boilermaker Tailgate Chili

Apple Stuffed Chicken Breast

My husband and I thought these stuffed chicken breasts were wonderful...a nice change of pace. As others recommended, I added a tad of ground cinnamon to the stuffing and seasoned the chicken. Doubling the sauce made a nice gravy for mashed potatoes. Thank you Behr.

Corn Chip Salad

This dish was super...I would highly recommend it. I make a similar dish that I call Taco Salad, using Taco-Flavored Doritos (if you can find them, if not, a spicy Dorito substitute) and Wishbone Deluxe French Dressing. They are both excellent.

BBQ Pork for Sandwiches

This had great flavor and was super easy. Keep in mind that the BBQ sauce you choose will totally affect the flavor, so please choose a good sauce. I used Jack Daniels' Spicy BBQ Sauce Recipe and it was very tasty. As other reviewers recommended, I added thick sliced onions and garlic to the slow cooker.

Yellow Squash Casserole

We enjoyed this as a main dish for a change of pace. Was great for using up an abundance of yellow squash I had, plus it tastes great served with a green salad and bread sticks. I added garlic and fresh, chopped anaheim green chilies to the vegetables.

Chicken and Artichokes

This was tasty, but not on the top of my list of chicken recipes. One objection is the cost of the artichoke hearts...$4.50 for a can of 5 hearts is a little too much for my blood.

Debdoozie's Blue Ribbon Chili

Thought this was a great chili. Taking advice from previous reviewers, I used one can chopped tomatoes and one (15oz)can tomato sauce instead of all tomato sauce. I increased the onion and added one tablespoon of sugar to even out the tomato base. I also substituted canned, hot chili beans, including the sauce, for one of the cans of kidney beans and it really kicked it up to the right temperature...not too hot, but certainly not bland. Served with Trader Joe's cornbread, which is out of this world. Thanks for the recipe, Deb.

Cream of Spinach Soup

Loved this soup....I added one ingredient that sent it over-the-top...4 or 5 quick shakes of ground nutmeg, plus lots of freshly ground pepper. Trust me, you'll love it with the nutmeg addition.

Cherry Chicken Salad

We loved this chicken salad. The flavors blend very well. I used about 2 cups of Louis Rich grilled chicken breast strips, and I added more pecans, mayo and buttermilk. Definitely a keeper. Thanks, Mia.

Spanish Rice Bake

We enjoyed this dish...thanks, Melodie. Only change would be to add additional cup of water (or liquid of your choice) towards the last half of cooking time...made it juicer. And, as, always...more worcestershire sauce!!!
