Ham and Pineapple Kabobs

We really enjoyed these...I did add a little soy sauce to the marinade and brushed the kabobs the last few minutes to avoid burning. Adding chunks of red onion and bell pepper to the kabob adds taste and crunchiness. Don't forget to soak wooden skewers!

Asparagus and Mushroom Frittata

Very tasty! I don't care for mushrooms so I just doubled the asparagus. Started with sautéing a few slices of onion and some garlic before adding the asparagus. I used a 10" sauté skillet (Kirkland brand) and it fit perfectly. I'll use this recipe again, for sure!

Creamy Dill Cucumber Toasties

These were a hit at a Labor Day block party! The platter was empty long before the BBQ was fired up. After reading previous reviews and experimenting, this is what I recommend: 1) Use all of dressing mix in the cream cheese and make it the day before. 2) Use fresh dill, not dried. 3) Add 1 Tbsp fresh dill to the cream cheese mixture. 4) Slice mini French baguette 1/4" and toast lightly under broiler. 5) Use potato peeler on English cuke for curly, thin slices.

Ginger Glazed Mahi Mahi

Wonderful dish...didn't change a thing! My only problem was the splattered oil when I put the fish into the hot oil...next time I would decrease the temperature to medium. Hubby liked the reduced glaze on his rice as well as the fish. Thanks for a great recipe :)

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

With this method, my hard-boiled eggs turned out perfect and were very easy to peel, even though they were very fresh! They were cooked to perfection with no gray/greenish ring or rubber texture...thanks for the research, Ken!

Beaumont Ranch Potato Salad

Wanted to love this...made it exactly, according to recipe...the EVO was totally overpowering to me (and it wasn't a cheap EVO). It was much better the second day after refrigerating, but I'll go back to some old potato salad recipes....still looking for "the one!"

Delicious Ham and Potato Soup

Fantastic potato soup. I double the recipe so we can have leftovers (which are even better the next day). I increase the amount of potatoes by a tad and add a few shakes of ground nutmeg at the end.

Tuna Fish Salad

This was super...I added 4 tsp sweet pickle relish and 1 tsp mustard and decreased the mayo by a little. My husband said, "I would make tuna salad if it would turn out like this." I said, "Here's the recipe!"

Lap Salad

We really enjoyed this salad. For convenience, I use a 16oz bag of Fresh Express 3-color slaw. I also substitute about 1/3 of the vegetable oil with sesame oil for more flavor. It doesn't even need to stand overnight, just a few hours works well also.

Pork and Green Chile Casserole

We thought this was great as a filling for tortillas or as a nacho topping. I used instant white rice as I didn't have brown rice on-hand; would substitute 2 Rotels for the diced toms/diced chilies; would use 1 Tbsp, instead of 2, of cumin, and add a dash of oregano. Serve with sour cream and avocados.

Summer Zucchini Stew

I thought this was great! I use 3 hot italian sausages, 2 medium zucchini and add a couple of shakes of crushed red pepper. Don't forget the crusty french bread for dipping and a little parmesan to top off the hot stew!

Baked Sesame Chicken

This is very tasty...we loved it. Coating mixture does need to be doubled. A tip to prevent the sauce from burning is to spray the dish with oil, add more soy sauce to the dish when basting, and cover lightly with foil after the basting. I also reduced the cooking time to 30-35 mins.

Cheesy Zucchini Casserole

We really enjoyed this dish...I added some chopped onions while boiling the zucchini and also added a few shakes of garlic powder to the egg mixture. It reheated very well in the microwave.

Amish Macaroni Salad

Excellent...cut dressing down to 1-1/4 cups Miracle Whip and adjusted the rest of the dressing ingredients accordingly. Used red onion, substituted zucchini for the red pepper and added a tad of chopped fresh Italian parsley. Decreased the amount sugar also.

Irish Bacon And Cabbage Soup

We loved this soup. Used regular bacon and cabbage since that's what I had leftover. One change is that it takes a bit more chicken broth and/or water.
