Chocolate Chip Cookies I

Just like Grandma used to make. :) Would be perfect if using 1/2 butter.I followed the recipe exactly, using shortening since I wanted just a small batch and I was too lazy to soften my butter. I like that these are easy enough to stir up in a bowl by hand rather than get out my mixer.

Sweet and Sour Smoked Sausage

Gotta love a recipe that is quick and easy yet everyone cleans their plates! I know the recipe states this takes 50 min. to make but I know it did not take me that long. I sauteed the onions and peppers first, then added the sliced sausage without cooking it separately first. That seems unnecessary to me. I added a little more sweet & sour to have a sauce for rice. I did add pineapple at the end but I liked it better without, like the original recipe. The kids loved the sweet pineapple though! Great recipe.

Glazed Apple Cookies

I made these for a large gathering and they went over very well. I didn't change a thing other than I took them out of the oven after 9 minutes and thought they were perfect! The kids really loved them.

One of the best soups out there and it freezes well as an added bonus. I grow zucchini in my garden, shred it up and freeze it, it works perfectly in this soup.

Slow-Cooker Barbecue Ribs

The cooking method is good, though cook time is too long. Mine were done at about 4 hours in the crock pot, thankfully I was home to notice and turned it to warm till dinner time. Sauce could use some work. Not as good as ribs on the smoker but I will definitely use this method again when I need an easy crock pot meal the whole family will eat!

Emily's Famous Hash Browns

Hot, crispy, hash brown perfection! I added a bit of garlic for extra flavor, and plenty of salt & pepper. Make sure your oil is the right temp so they don't turn out greasy or burn. The kids gobbled them up!

Jana's Pressure Cooker Lentil Ham Soup

Really good soup, and the timing in the recipe is perfect. The vegetables were tender but not mushy or overcooked and the lentils were cooked perfectly as well. I did not use the shanks as directed since I had leftover ham I needed to use up so I used chicken broth and part water instead. I have no doubt the ham shanks and ham broth would be even more flavorful. I will try that next time!

Yellow Squash Casserole

Very good way to use up your summer squash and make a vegetable the whole family will love. I might try it with bread crumbs or corn flakes next time, I don't usually have crackers on hand and I'm sure it will be good that way as well.

Banana Coconut Loaf

Absolutely delicious, and beautiful bread! I made it as written, and loved the pop of color the cherries added. I did use melted coconut oil rather than butter but that was the only change. I might try to cut back on the sugar next time as I feel it is a bit too sweet. Also make sure to grease the pan well as it sticks a bit.

Whole Wheat Ginger Snaps

I'm always looking for ways to use our fresh ground wheat flour. We love gingersnaps so I thought I'd try these. They are a strongly flavored cookie (especially when you use high quality spices as I do) which I love. These have a lot more molasses than most ginger snap recipes. The only problem I had with these is that the dough was very soft and they flattened out more than I like. I tried chilling the dough but that didn't help them stay thicker, though it was easier to roll them into balls. I think I'll try tinkering with my old ginger snap recipe but add this combination of spices because I really liked that.

Cheesy Chicken Meatballs

These were fabulous! They were really garlicky though (and I love garlic) and I used plain cream cheese. I am sure they would be way too garlicky with the garlic cream cheese. I made a double batch and froze the meatballs on a cookie sheet, then transferred the balls to ziploc bags. I put enough in each bag for one meal for the 3 of us. Baked them for about 15-20 minutes at 400 degrees from frozen and they were perfect! (I did check the internal temp- very important to get correct) Great recipe!

Whole-Wheat Chocolate Chip Cookies

I used 3 cups of my fresh ground pastry flour, no AP flour and these turned out fabulous! The only other change I made was to sub butter for margarine because I don't touch the fake stuff. They did spread a bit due to the butter but not bad and the taste was amazing. I never expected to like WW cookies as much as regular cookies! The only change I would make for next time is to reduce the sugar a bit, I thought they were plenty sweet.

Whole Wheat Banana Nut Bread

My hubby said, "this is as good as ANY banana bread I've ever had". We loved this recipe and I love that it's so healthy. I give it to my 2 year old for a snack or breakfast and he loves it!
