About this Cook
My family and I live on a farm and we have sort of a "do-it-yourself" attitude; grow our own veggies, & do a lot of preserving, I bake all my own bread. I love to cook "from scratch" as much as possible.
My favorite things to cook
My favorite thing is baking, I grind wheat & bake our bread. I do wedding cakes as often as time allows, and lots of cakes for other celebrations too.
My favorite family cooking traditions
My grandmother was a wonderful cook, especially baking, she taught me some of our family's Scandinavian recipes. My mom was a more "inventive" cook, she loves creating her own recipes and trying new things.
My cooking triumphs
I taught myself to make wedding cakes, and made my own! People said I was crazy to do it, but I'm glad I did, because I made it just the way I wanted it! We had chocolate cake with raspberry ganache filling, and orange pound cake both frosted with white chocolate buttercream.
My cooking tragedies
Too many to count! I learn by trial and error, and have made a lot of errors! Baking scratch cakes is difficult, and I've had a lot of bad ones in between the good ones! Once I accidentaly left the sugar out of a chocolate cake I was making for someone else, and I only figured that out because the cake came out so much flatter than usual. Luckily, I remembered what I did before I gave it to her, and had to quickly whip up a new one!

Jana's Pressure Cooker Lentil Ham Soup
Really good soup, and the timing in the recipe is perfect. The vegetables were tender but not mushy or overcooked and the lentils were cooked perfectly as well. I did not use the shanks as directed since I had leftover ham I needed to use up so I used chicken broth and part water instead. I have no doubt the ham shanks and ham broth would be even more flavorful. I will try that next time!

Yellow Squash Casserole
Very good way to use up your summer squash and make a vegetable the whole family will love. I might try it with bread crumbs or corn flakes next time, I don't usually have crackers on hand and I'm sure it will be good that way as well.

Banana Coconut Loaf
Absolutely delicious, and beautiful bread! I made it as written, and loved the pop of color the cherries added. I did use melted coconut oil rather than butter but that was the only change. I might try to cut back on the sugar next time as I feel it is a bit too sweet. Also make sure to grease the pan well as it sticks a bit.
