Barbeque Style Braised Short Ribs

I used this recipe to help me recreate a dish I had at a restaurant the other night. I only used about a 1/2 cup of each onion and carrot diced along with two cloves of garlic for flavoring. I added to the sauce about 1/4 cup of molasses and about 4 tablespoons of honey to sweeten the sauce up more. Since I had a couple portabella mushroom caps to use up, I added those sliced when I had one hour remaining to cook. I served this on a bed of cream cheese polenta, with diced parsnip and a gremolata garnish. Mission accomplished: Delish!

Apple Stuffed Chicken Breast

I wished that I had read reviews a little farther back as the chicken needs to be seasoned before rolling up the stuffing. I never follow a recipe exactly so here are my alterations. I don't measure so here goes. To the stuffing mix I added some cinnamon, apple pie spice, curry and currants. I just added spices until it smelled right. To the gravy I added the leftover stuffing which I made extra on purpose, more wine, no water, a couple of splashes of half-n-half, brown sugar, about a tablespoon of maple syrup, curry, salt, and pepper. I reduced the gravy down for a couple of minutes then pureed it to take care of the apple chunks. The gravy was awesome! The chicken was very good with the stuffing that I made, couldn't see or taste the chedder even though I used twice as much. I think that the chicken would have been much better if I had seasoned it before I stuffed it with some salt and pepper at the very least. Overall, it's a good recipe to get started on and add your own touches to! I will be making this again, it was a hit with company over for dinner.

Banana Bread VII

I never thought a bisquick type recipe would taste so good! Like I usually do for banana bread recipes, I used applesauce for all but a tablespoon of the oil, used extra vanilla and added about 1/2 cup of chocolate chips. My husband said, "It's not good, it's too good!" I liked this recipe because it was not as dense as the regular banana bread I make. I will make this on a regular basis to use up those bananas! Thank you!

Black Bean Vegetable Soup

Tasty and healthy. I usually make this soup on a weekly basis and the entire family loves it. I have added two stalks of chopped celery for some extra crunch and use super sweet corn to offset the spice in the soup. **UPDATE**A wonderful change I did the other day was to add smoked corn. This summer I hickory smoked several dozen ears of corn in the husk on the smoker after soaking for an hour in water. I cut the kernals off and froze in quart bags. Unbelieveable taste!
