Chicken Berry Salad

The beauty of this recipe is that you CAN change things out. I had extra grilled chicken breasts that I had marinated in a combination of Italian and raspberry vinegrette dressings so adding strawberries, raspberries and dried cranberries was perfect. I also sprinkled feta cheese on top to balance the sweet flavors. Great recipe!

Southern Made Cheese Ball

since i'm a bit concerned about the green onion purity these days, i used chives from my own garden. before you put this out on the platter, slice some crispy apples. makes a great presentation, and the apples go well with the tastes.

Applesauce Raisin Bars

The recipe itself is excellent, altho I plumped the raisins in a saucepan with a little apple juice. Drain well before adding to batter. The icing tastes good, but needs more milk to make it spreadable & also to cover the entire pan. I ended up adding about a treaspoon more milk....do it slowly, maybe 1/2 teaspoon or less at a time.

Barbequed Hamburgers

My family doesn't like additives to burgers, so I just fried quality meat and added the sauce. I also thought the sauce was a bit too ketchup-y, so I added at least twice the worchestershire sauce and about a tablespoon of brown sugar. One more thing--in any recipe, don't skimp on the worchestershire sauce. I always use something like Lea & Perrins. It does make a difference.

Cranberry Pork Roast

I used cranberry raspberry juice since that was what I had, and then cut the sugar altogether. It came out great. The gravy was thick enough to use as a sauce without thickening & we didn't use it over potatoes. I did a mushroom/orzo pilaf instead. Leftovers are great.

Chocolate Chip Shortbread Cookie Logs

This recipe is excellent. I followed it exactly & did not let the bottoms get too brown. They will truly melt in your mouth! I did half dipped and the other half lightly drizzled with the chocolate. Place the cookie sheet in the refrigerator to help the chocolate set up.

Coconut Walnut Biscotti

These turned out fine for me...maybe a bit drier than other biscotti I've tried. If the dough crumbles when you try to make your logs, add a bit of liquid like a drop or two of milk.

Chocolate Cherry Biscotti

I've also made this recipe using just the cherries. The dough will turn slightly pink. The last time I baked these was for a wedding so I made the logs only 1 1/2 to 2 inches so they would look delicate. Also if you don't like the crunchy texture, after slicing, only bake for about 5 minutes total to just dry the cookie. They still keep just fine and tast great.

Italian Cookies II

I mad ethese cookies for a wedding reception. Used lemon flavoring in the dough and lemon juice in the frosting. Very tender cookies that are delicate in texture. Lovely for something fancy.
