Candied Citrus Peel

I did this recipe with kumquat peels and loved it! I made 4 vertical cuts at the compass points and peeled by hand from there. Because of the thin peels, I only did the first step twice. I then dipped it in chocolate. YUM!

Chocolate Cupcakes

In cooking, just like in clothes, you will always need basics. This are a fabulous basic cupcake, perfect for dressing up or dressing down. The only bad thing about this cupcake is that it dries out over time, but by adding chocolate chips to the batter, you extend the moistness by a few days.

The Ultimate Brownie

Very good... although for some reason, my batter is never enough to fill the pan, so they turn out flat. A good fix to this is to add about half a bag (I know it sounds like a lot, but its sooo good) of semi sweet chocolate chips. This also keeps the brownies from drying out over a period of time. Also, you need to temper the eggs before adding them to the saucepan, as the directions don't say. Otherwise they'll cook on the spot. You temper by adding bits of the hot liquid and beating fast after each addition until the eggs have doubled in size

Lemon Cupcakes

Tasty! So moist and delicious- waaaay better than the dry chocolate cupcakes I tried before them. I made them with cream cheese icing, although i did barely have enough batter to fill the cups 3/4 of the way. I'd say adjust the recipe to 1 or 2 more cupcakes than you need to make.

Pizza Snacks

I'm thirteen and I absolutely HATE cereal and quick oatmeal. I barely have 10 minutes in the morning even though I love to cook, and my mom won't buy sugary freezer pastries. I don't even like toast or toaster waffles. This was a GIANT problem for me- until i found this recipe, which i eat every day, before and after school. However, I use already cooked pepperoni so I just heat it in the microwave until the cheese melts instead of cooking it for 20 mins.

Honey-Baked Bananas

Super yum- I ate both of these servings by myself, even though I usually turn down bananas of any kind. The chnages i did make were these: 1/2 a tsp. of vanilla added to the butter-lemon mixture, and topped with brown sugar since i didn't have any coconut.

Creamy Rice Pudding

Delicious seasoning and flavor, but missing one star because it was a thinner and soupier than I'd like the first time I made it. A dash of corn starch thickens it right up though. Just try about half a tsp to start with and add more to get the consistancy you want while the rice is soaking into the milk and sugar.

Wonderful Waffles

SUCH a step up from my ten year old sister's 'oops i put too much baking soda in again and just eat around the lumps' waffles. Although I love her, this is the recipe we'll be using from here on out. I used half white and half wheat flour. It worked like a charm, and I took everyone's advice and just mixed it all together in a bowl. I love the way the brown sugar tastes too.

Masala Chai Brownies

I have nooo idea how to rate this recipe, because right now mine are ina lumpy, black, bitter mess. it's fully cooked, but it looks nothing like the picture. I'm panicking slightly, wondering what I did. The only thing was maybe, I used chai latte mix instead of tea and cut down 1/4 of the sugar. They are dense lumps that don't stick together and they barely cover the bottom of the pan. WHAT DID I DO???????

Room 157 Sugar Cookies

Whole wheat is supposed to make it taste HEARTY, not like playdough! Ewww! I have grown up on whole wheat, but yuck! And I don't blame you, BAKERCOLLEGEBAKER because of you comment about the folks in the test kitchen changing it. If you DO decide to chance this recipe, add about 3 tbs of melted butter into the oil, and DO NOT UNDER ANY CIRCUMSTANCES cook longer than the recipe says, even if they seem underdone. also, adding a little honey would go along way toward making it edible.

Cocoa Oatmeal Cookies

So moist, and the taste is awesome too! I used a little more cocoa than necessary (oh, you bad chocoholic, you!) and it was just sweet enough. It's easy to make and keep a dry mix for this; all dry ingredients except sugar mixed together, and then a separate bag for the sugar. Then you can make it anytime!

Simple and beautiful and delicious! It's a perfect mother's day gift for my mom, who always seems to be on a diet (they are fresh fruit!). These rock and now I will laugh at all the commercials for $40 boxes of these, because these are so easy!
