Kiara's Cake
About this Cook
I'm 31 and about to get married and buy a townhouse. I can't WAIT to cook for my husband in my OWN kitchen. I waitressed for 16 years and got the best cooking advice from Alberto, a Mexican chef in an Italian restaurant. I am a writer/editor, so my DREAM JOB would be a food critic columnist.
My favorite things to cook
A good cook need not be a gluttonous eater. I like to be educated on nutrition. I am a high vegetable, low meat kind of person.
My favorite family cooking traditions
My Irish/Scottish grandmother was a TERRIBLE cook, and I therefor was a picky eater. Who likes to eat dry meat and flavorless potatoes? I decided one day that if the cooks in a restaurant can make delicious food, so can I. So now I do.
My cooking triumphs
My first attempt at a fabulous and impressive cake was...well, fabulous and impressive. A 3-tiered chocolate cake with buttercream and fondant. A funky pink and black cake, as requested, for my niece's first birthday extravaganza. I don't know if I'll ever top that amazing cake. It was made with true love.
My cooking tragedies
They happen all the time. But you'll never succeed unless you try and try again. (Luckily, my family will eat whatever I tell them to!!) hahaha

Seafood Newburg
This was delicious, and my family loved it! The recipe doubled easily. I followed advice & added garlic with the butter and flour and left out ketchup and worcestershire (b/c I didn't have any). Great advice! I added catfish, shrimp & scallops & they cooked up quickly and beautifully. The great part is you can control the paprika to your taste & remember some Pillsbury biscuits to sop up the sauce. A great birthday dinner for my sister-in-law. I would make this again and again.
