Stromboli

Reviewed: Dec. 27, 2012
I use a 1 pound package of fresh bread dough from my local bakery. Cut it in half and roll out 2 pieces. My husband likes plain toppings and I like a ton of toppings. For his stromboli I add pizza sauce to half, pepperoni, crumbled bacon, sliced mozz and sliced provolone (3 slices of each), folded it over, pinched the dough closed and brushed on EVOO and sprinkled italian seasoning. The next one I put sauce on half, pepperoni, crumbled cooked bacon, black olives, bananna peppers, sliced mozz and sliced provolone (3 slices of each). Again, brushed with EVOO and sprinkled with italian seasoning. Cut 3 slits in each. Put them on their own cookie sheet lined with parchment paper. Cooked at 425 for 30 min. These are out of this world good. (I rotate the stromboli in oven half way through cooking). Whats great about this recipe is that you can make an individual stromboli for everyone and stuff it with whatever they like. Make this all the time. Love this as an easy dinner. It is even better the next day cold. Try it and enjoy !!

Sweet Restaurant Slaw

Reviewed: Dec. 17, 2012
This deserves 10 stars !!!!!!!!!! It is out of this world good !!!! I did cut back just a little on the sugar as one reviewer suggested. I made this to go along with pulled pork for our annual Christmas Party so I made it a day ahead. The longer it sits in this wonderful sauce the better it is!!!!!!! Everyone who tried it absolutely loved it. I have requests for the recipe in my e mail. Thank You so very much for sharing !!!!!!!!!!!!

Sweet Spicy Wings

Reviewed: Oct. 20, 2012
This sauce is out of this world good !!!!!! I put it on boneless chicen wings after I deep fried them in my fryer. The only change I made was I used "Franks RedHot Buffalo Wing Sauce" about 10 dashes of red pepper flakes and just a touch more honey than the recipe calls for except for this Ifollowed the recipe exactly as written. You have to try this amazing sauce on your chicken wings or grilled chicken its out of this world good !!!!!!!!!!!!!!! THANKS FOR SHARING !!!!!!!!!!!

Mijo's Slow Cooker Shredded Beef

Reviewed: Sep. 30, 2012
Excellent as written !!! I have made this twice and the first time made it exactly as written but felt it needed just a little more spice. So the second time I added the following to the recipe: Used 1.5 cups of cola instead of beer (really like the flavor of the cola better), 1 cup of beef bouillon (used the cube and disolved it in hot water), a couple shakes of cumin, ancho chili powder and crushed red pepper flakes, 15 oz can diced tomatos, 3/4 can diced green chilis (dont like chopping my own jalapinos) and 2 cinnamon sticks (cinnamon gives it a more traditional mexican flavor). Rubbed the dry ingrediants on top of a 3.5 pound chuck roast put the roast in the crock pot then dumped all the wet ingrediants in the crock pot. The liquid did just cover the roast which helps prevent the meat from drying out, left the slow cooker on low for about 11 hours, took the meat out and shredded it with 2 forks. I then spooned some of the liquid from the crock pot over the meat. I decided to make quesadillas with cheese served them with sour cream on top and it was out of this world good. This recipe is a keeper and probably the best one on this site for shredded beef (Ive tried a few). Thanks for sharing and enjoy !!!

Chicken Fried Chicken

Reviewed: Sep. 16, 2012
I wish I could give this 10 stars !!!!! This coating is out of this world good !!!!!! I used unsalted topped saltines (we are salt sensative) put the entire sleeve of crackers in my mini food processor and crushed then I addd the rest of the ingrediants in the large ziplock bag exactly as written. I had bought boneless skinless chicken cutlets because they were on sale and I am glad I used the thinner pieces of chicken. I decided to dredge the chicken in flour, then in the egg and then in the cracker crust. Heated up the oil in my deep fryer to 375 and fried for about 8 minutes until golden brown. This fried chicken was wonderful !!!!!! Thank You for sharing.

Chipotle Crusted Pork Tenderloin

Reviewed: Jun. 25, 2014
Excellent rub!!!!!! I've used this rub on a pork tenderloin on the grill and tonight I am doing a boneless pork roast in the oven (because it's pouring outside). The only change to the recipe I do is I use 2 teaspoons of the chipotle chili powder. For the oven method I put the roast in at 450 for 30 min and then turned oven down to 350 for another 40 min (until internal temp was 160) both ways are very good but I like it on the grill a little better. Served it with cheesy hash brown potatoes (recipe on this site) and French cut green beans. If you are not a huge fan of spicy food just cut back on the chipotle chili powder and experiment with the amount to suit your personal taste but this rub is very tasty and is perfect on your pork loin. Thank you for sharing!!!!!

Boilermaker Tailgate Chili

Reviewed: Sep. 12, 2013
This chili is so very good. I followed the recipe as written using all the spices and added a few more dashes of tobacco and a few dashes of ancho chili pepper powder. I used a 4oz can of diced green chili peppers and skipped the green and red peppers (just personal preference). We don't care for a ton of diced tomatoes so I only used one 28oz can and then added a large can of hunts tomato sauce. I also used 3 cans of drained and rinsed pinto beans and 1 can spicy chili beans. I increased the beer to just about a cup. I put it in the crock pot and let it cook for several hours. Served it with corn chips, sour cream, shredded cheddar cheese and some homemade corn bread. This is a nice change from my regular chili I have made forever, glad I found this recipe.

Spaghetti Pie

Reviewed: Mar. 4, 2012
This is a great way to make spashetti night different. I did not use the reduced fat cream cheese and sour cream used the regular because that's what I had. I also did not have egg substitute, I used 2 eggs and a tiny bit of heavy cream and this seemed to give the eggs the consistancy of egg beaters. I let the spaghetti cool like one reviewer suggested and then mixed in the eggs and parm. If you put the eggs in when spaghetti is hot the eggs will begin to cook. I pressed the spaghetti into the pan and decided to use spaghetti sauce I already had made in the freezer. The sauce had ground beef, mushrooms and some bacon in it (sort of like a goulash) poured that on top of the spaghetti. (I think you have to have meat in this dish). Baked it for about 45 min until it was hot then topped with the mozz. cheese. It came out great, and like I already said this was a nice change to regular spaghetti. Thanks for sharing.

Hopefully eveyone at the cocktail party I am going to tonight will like this as much as I do. Thanks for a great recipe.

Tater Tot Casserole III

Reviewed: Feb. 20, 2013
I loved this recipe. I decided to use cubed hashbrown potatoes instead of tater tots. I added all the cheddar and then added about a half cup of colby jack to the potatoes. You can cut the amount of softened butter to the potato mixture in half but putting all the melted butter into the corn flakes is important, they crisp up so good !! I made all of the potatoes but there is a ton so I filled up the baking dish and freezer saved the rest of the potato mixture for a later time. The recipe as written does make a ton. Make this and you will have a great side dish, I made them with grilled soy sauce turkey tenderloin on the grill and veggies. You will love this recipe.

Easy Bacon and Cheese Quiche

Reviewed: Jul. 15, 2012
Very---Very Good !!! I Decided not to use bacon bits, took a pound of bacon, cut it up and fried crisp, doing it this way it fries up perfect in no time. After bacon was done and oil drained from pan I fried the onion for a few minutes just to soften them. Besides the first 2 differences I followed recipe exactly as written. Its an excellent quiche.
