Chocolate Chip Bundt Cake

Reviewed: Oct. 12, 2012
I bought a heavy metal rose shaped bundt pan at an estate sale today and after washing it my husband said well lets try it out so I came across this recipe. All I had on hand was hershey's unsweetened cocoa, only had white choco. chips, and had a bag of dark chocolate "Wilton" candy melts in pantry. So made this with what I had in the house. This is an awesome bundt cake. The topping was really good, I used a 12 oz bag of the dark chocolate candy melts and 1 cup of the heavy cream and 3 pinches salt and about a teaspoon of sugar, it worked just fine, I only used probably 3/4 of the sauce. If I ever have the Ghirardelli on hand I will use that but because I probably wont I will use what I have and whats affordable. Definitely try this recipe its worth the work. Also, I had to bake it for about 45 min.

Four-Bean Medley

Reviewed: Sep. 30, 2012
I decided to use Goya "pink beans" instead of Kidney beans (I dont care for Kidney) 1 can of butter beans, 1 can of pinto (had them in the pantry) and only had a big bag of frozen whole green beans. I also only had the 28 oz can of baked beans so used that. I fried up a pound of bacon and crumbled it and threw that in. Also decided to double the sauce because I added an extra can of beans and used twice as much green beans. I added hot dogs that I cut in thirds (added the hot dogs the last hour in crock pot). I cut back just a little on the brown sugar and vinegar. This is so good !!!!!!! I served this with chabatta bread to "sop" up the sauce. Thank You for a great recipe !!!!!!

Mijo's Slow Cooker Shredded Beef

Reviewed: Sep. 30, 2012
Excellent as written !!! I have made this twice and the first time made it exactly as written but felt it needed just a little more spice. So the second time I added the following to the recipe: Used 1.5 cups of cola instead of beer (really like the flavor of the cola better), 1 cup of beef bouillon (used the cube and disolved it in hot water), a couple shakes of cumin, ancho chili powder and crushed red pepper flakes, 15 oz can diced tomatos, 3/4 can diced green chilis (dont like chopping my own jalapinos) and 2 cinnamon sticks (cinnamon gives it a more traditional mexican flavor). Rubbed the dry ingrediants on top of a 3.5 pound chuck roast put the roast in the crock pot then dumped all the wet ingrediants in the crock pot. The liquid did just cover the roast which helps prevent the meat from drying out, left the slow cooker on low for about 11 hours, took the meat out and shredded it with 2 forks. I then spooned some of the liquid from the crock pot over the meat. I decided to make quesadillas with cheese served them with sour cream on top and it was out of this world good. This recipe is a keeper and probably the best one on this site for shredded beef (Ive tried a few). Thanks for sharing and enjoy !!!

Chicken Fried Chicken

Reviewed: Sep. 16, 2012
I wish I could give this 10 stars !!!!! This coating is out of this world good !!!!!! I used unsalted topped saltines (we are salt sensative) put the entire sleeve of crackers in my mini food processor and crushed then I addd the rest of the ingrediants in the large ziplock bag exactly as written. I had bought boneless skinless chicken cutlets because they were on sale and I am glad I used the thinner pieces of chicken. I decided to dredge the chicken in flour, then in the egg and then in the cracker crust. Heated up the oil in my deep fryer to 375 and fried for about 8 minutes until golden brown. This fried chicken was wonderful !!!!!! Thank You for sharing.

Make Ahead Lunch Wraps

Reviewed: Sep. 6, 2012
Oh my gooooooooodness this is such a simple, easy wonderful idea for lunch !!!!!!!!! I did halve the recipe, I used 2 cans of black beans, 1 can pinto, 1 10oz can ro-tel diced tomatoes with green chilies, and used 2 cups cooked brown rice and one 15 oz can of corn. Dumped the beans and corn in the strainer, rinsed and after all the liquid drained dumped it into a large bowl then mixed in the rice. I put a few dashes of salt and pepper in this mixture. Mixed and then decided some meat would be good, so I cooked up a pound of ground beef with taco seasoning. Laid out the large flour tortilla shells, spooned the bean and rice mixture, a heaping tablespoon of the ground beef then sprinkled the pepper jack cheese. This is the best lunch on the go you can have. Thank you for sharing.

Bacon Cheeseburger Meatloaf

Reviewed: Aug. 31, 2012
I followed the recipe "almost" exactly as written. I had 90/10 ground beef in freezer so I used that, when I was mixing the meat it was really wet, so as another reviewer suggested I added a little more bread crumbs. I added a small chopped onion to the mixture also. I put half the cheese in the meat mixture, and saved the other half. I spooned half the meat into the loaf pan, sprinkled the rest of the cheese on top, then put remaining meat on top. Then spooned the rest of the ketchup/mustard mixture on top. Cooked for 1 hour. Sprinkled the fried onions on top and cooked another 30 min. It came out great !!!!!!!!! Like the one reviewer said, you will get a "gooey" center. It tastes like a bacon cheeseburger. Excellent !!!!!!!!!! Will make again

Spicy Shredded Beef

Reviewed: Aug. 14, 2012
This shredded beef is really very good. Made it first exactly as written, wasnt very spicy so second batch I added a few things. I used a 4 lb chuck roast, added all the ingrediants in the original recipe then added, a medium chopped onion, 1/2 tablespoon cayenne pepper, 1/2 tablespoon chili powder, two-10 ounce cans diced tomatoes with green chilis, 2 cloves of crushed garlic, few dashes of salt and pepper, a few dashes tobasco sauce and then 1/4 cup water. I put the whole thing in my crock pot and let it cook on low for 9 hours. Shredded the beef and served it on warmed flour tortilla shells with sour cream, shredded lettuce, cheese and black olives. It was a great dinner. Like I said as written it was very good but just needed a little more spice in my opinion, if you are not a fan of a lot of spice make this as written, if you like to kick up the spice try adding what I did. Thank You for sharing !!!!

Hearty Bean Bake

Reviewed: Jul. 20, 2012
This is so good !!!!!!!!! I had this type of bean bake at a cookout and was looking for a recipe and came across this one. I made it the first time exactly as written and it was excellent. Making it for the second time now and here are a few changes: used a full pound of bacon fried crisp, used fresh yellow beans from my mom's garden ( I just added them until it looked like enough), one 15 oz can pinto beans rinsed and drained, one 15 oz can black beans rinsed and drained, and of course the 28 oz baked beans, cut back a little on the vinegar used 1 1/2 tablespoons. I doubled the sauce as one reviewer suggested makes a big difference. I put this into my slow cooker on low for 8 hrs (I had time) if I was in a hurry would have done slow cooker on high for 4 hrs. I think the slow cooker makes this recipe much better than putting in the oven. BUT-------if you need it in a real hurry the oven method is still VERY--VERY GOOD. This is a great recipe, and you can make it your own easily. Thank You for sharing !!

Easy Bacon and Cheese Quiche

Reviewed: Jul. 15, 2012
Very---Very Good !!! I Decided not to use bacon bits, took a pound of bacon, cut it up and fried crisp, doing it this way it fries up perfect in no time. After bacon was done and oil drained from pan I fried the onion for a few minutes just to soften them. Besides the first 2 differences I followed recipe exactly as written. Its an excellent quiche.
