Yorkshire Pudding II

You have to pour a little vegetable oil and some butter in pan and heat that up in oven until it is "popping" then remove pan and pour in the batter then bake until it is golden brown and risen. This is the proper way to make Yorkshire pudding ! I made this in the big muffin tins where I poured a little vegetable oil and a small pat of butter heated up the pans until they were "popping" removed and poured in the batter then baked. I made these the day before and then reheated them for about 10 min in oven at 350.

Slow Cooker Mashed Potatoes

I made these this morning for Thanksgiving. I am going to follow other suggestions I took them out of fridge at 11am and let them sit for an hour to warm up and then covered the crock with a clean kitchen towel and cooked for 3 hours. I added a little more of the reserved liquid and stirred them a few times while they were cooking in crock pot. I doubled this recipe using 10 pounds of red potatoes, and this filled up my large crock pot (I'm cooking for 30). I decided to add 3 pounds of cooked crumbled bacon and have already added some salt and white pepper, they taste amazing. I reserved a lot of the cooking liquid and I used about two cups when first mashing the potatoes. This is the easiest way I have found to make mashed potatoes for a huge crowd.

Chef John's Twice-Baked Potatoes

I adjusted this recipe just a little. I decided to use regular diced yellow onion I hate buying special onions just for one recipe. I added bacon to the potato mixture and added a mixed blend of white and yellow cheddar. After I fried the bacon I drained off the grease and put in the diced yellow onion in the same pan just to soften them (maybe 5 min). I used the entire pint of heavy cream, fresh ground pepper and salt. Added a few dashes of the cayenne pepper and three tablespoons of butter. I added some more bacon to the top of potatoes then brushed with melted butter. These twice baked potatoes are worth the work.

Baked Apples

Had to cook apples for about 40 min, after 15 min I checked them and they were still hard. I used one of the tips from the reviews and covered them with aluminum foil. I used red apples because that's what I had. I followed the ingredients as written, I did add some chopped pecans and a little water in the pan. Served the apples with vanilla ice cream and drizzled the water,pecan,brown sugar cinnamon syrup over it. They are a perfect fall treat.

Aunt Ro's Baked Beans

These beans are to die for !!! Made these for Labor day picnic and everybody loved them. I did not have butter beans on hand so I used red beans and followed the rest of the recipe as written. This will be my go to baked bean recipe from now on !!! Someone compared this to Calico beans, it is similar but much, much better ! Thank You for sharing Aunt Ro's great recipe!!! Made this for the second time in a week. This time I used 1.5 pounds ground beef, fried it as directed with a large diced onion and added a little minced garlic, I fried the bacon first and left a little bacon fat in pan when I fried ground beef, onion and garlic. I used a 28 ounce can of Bushes Original Baked Beans plus a 15oz can, and used 2 cans pinto and 2 cans red beans. Because the BBQ sauce I used was sweet (Wegmans brown sugar BBQ sauce) I cut the brown sugar to 3/4 cup. I fried up a pound of bacon and added half pound of crumbled bacon to beans and saved other half to sprinkle on top of beans in crock pot. Like I said already in this review these beans are too die for good !!!

Baked Cinnamon Apple French Toast

Ok------I was lazy and really did not want to peel and core apples, this recipe looked so good I had to try it but I put my spin on it. I used a can of com stock apple pie filling, because it's already sweet I only used a tablespoon of brown sugar, I put the apple pie filling, pecans, dried cranberrys, and butter in a bowl and mixed them, then I poured this into the prepared 13x9 pan. I never have egg substitute on hand so I used another reviewers suggestion and used 6 large eggs, milk and cinnamon. Mixed eggs with other ingredients and poured it over day old Italian bread that I bought and put in fridge to "dry" out a bit, then I followed the directions as written. This is beyond good !! I love that you make it a head of time and let it sit over night, with my family's busy schedule it was a nice treat for my husband to wake up to the great smell of this French toast bake. Thank you for sharing !!!!!

Beer Lime Grilled Chicken

We liked the flavor of this marinade and was glad to find something different for chicken. I was getting tired of soy or teriyaki based marinade's. The combination of lime, beer and honey was very tasty and the chicken came out juicy and flavorful. I used dried cilantro because I didn't have fresh on hand I will use fresh the next time. Thank You for sharing.

Chipotle Crusted Pork Tenderloin

Excellent rub!!!!!! I've used this rub on a pork tenderloin on the grill and tonight I am doing a boneless pork roast in the oven (because it's pouring outside). The only change to the recipe I do is I use 2 teaspoons of the chipotle chili powder. For the oven method I put the roast in at 450 for 30 min and then turned oven down to 350 for another 40 min (until internal temp was 160) both ways are very good but I like it on the grill a little better. Served it with cheesy hash brown potatoes (recipe on this site) and French cut green beans. If you are not a huge fan of spicy food just cut back on the chipotle chili powder and experiment with the amount to suit your personal taste but this rub is very tasty and is perfect on your pork loin. Cheesy Hash Browns

Excellent side dish. I use the cubed frozen potatoes and used the philly shredded cheddar (the cheese mixed with Philadelphia cream cheese) . I always double the amount of the cheese. These potatoes freeze great, I measure out a dinner portion for 2 and put it in food saver bags and freeze the portions. Use extra corn flakes mixed with butter.

Weeknight Wonton Soup

It is definitely easy to make. Husband liked it but I did not care for the flavor. If I make it again I may only use chicken broth and omit the beef broth I think it was the combination of the two that I didn't care for.

Baked Teriyaki Chicken

This is a great teriyaki sauce. Rich and very flavorful. I made boneless chicken tenderloins and baked them for about 20 min. Served the chicken on top of Goya yellow rice mixed with peas and corn, it was a great dinner. Thank You for sharing.

Poppy Seed Bundt Cake II

This poppy seed cake is beyond good !!!!!!!!!!!!! I have made this about 100 times and follow recipe exactly as written the only thing I changed was I use a lemon glaze made with the juice of 1 lemon and 1 cup of confectioners sugar (I usually use concentrated lemon 3-4 tablespoons) This cake is ALWAYS a huge hit with family and friends. Thank You for sharing !!!!!!!!! I swear you will love---love this cake.

Grilled Turkey Tenderloins

I have made this marinade probably 100 times since I found it a number of years ago and just realized I never rated it. I follow the recipe exactly as written. Definitely use low sodium soy, regular soy makes the marinade very salty but low sodium soy is perfect. I make 2 batches of the marinade, I make one batch in a zip lock bag and a second batch in a container for basting the turkey on the grill. I use turkey tenderloins and they are usually over a pound of turkey. I usually marinade the turkey for about 8 hours but I have left it overnight and I have also only marinated it for about an hour and still get great results. I have used teriyaki in the past when I didn't have soy on hand and it comes out just as good, just a little different flavor. The turkey comes out so moist and flavorful you simply cant go wrong with this recipe for grilled turkey tenderloins. Thank You for sharing.

Sweet, Sticky and Spicy Chicken

This is so very good. I used chicken tenderloin strips and I used 2 teaspoons of powdered ginger because I never have ginger root on hand and also used low sodium soy sauce (just a personal preference regular soy sauce is way too salty for our taste). For the hot sauce I took other reviewers suggestions and used sriracha hot chili sauce (found it in the international isle at grocery store) I doubled the sauce and used a little extra honey and brown sugar (maybe an additional half tablespoon of each) and used a little extra sriracha sauce. I added a little salt and pepper to the chicken then tossed the chicken strips in flour before pan frying and they had a nice golden brown crust on them before pouring in the sauce I removed the chicken and poured out the oil from the pan, put the chicken back into pan and poured in the sauce and then added a tablespoon of corn starch mixed with a little water and the sauce thickened up and finished cooking the chicken. I think next time I make this I may cut back on the amount of corn starch the sauce got very thick. I made Goya Mexican rice chicken flavor and added some peas and corn to it and put the chicken on top of the rice and we had a very good satisfying dinner. You wont be disappointed with this dinner, the chicken is juicy and very flavorful thank you for sharing and thanks to all the helpful reviews !

Slow Cooker Buffalo Chicken Sandwiches

It was pretty good, I used franks Red hot chicken wing sauce which is pretty mild compared to regular franks red hot. I added a cup of chicken broth mixed with the hot sauce, added some diced onion and celery drizzled the chicken with EVOO, used 6 chicken breasts and put the butter in at the beginning of the cooking. Chicken shredded easily after about 6 hours. I kept the shredded chicken in the liquid for about another 30 min to soak up the juice. Served it on crusty chabatta bread with some extra hot sauce. I plan on trying the left overs in a wrap as other reviewers suggested. I made the blue cheese coleslaw from this site and did not like that at all.

Oven-Roasted Asparagus

I made this along with another asparagus dish (asparagus with junk from this site) because I wasn't sure which way our guests would like the asparagus. I followed the recipe except I cut down the sea salt in half, I think if you use regular table salt you can use as much as stated in the original recipe but sea salt gives it a way better flavor. I also only had parmesan & Romano cheese blend in fridge. I cleaned the asparagus drizzled with olive oil in a bowl then added the rest of the ingredients after I put the asparagus onto a cookie sheet lined with tin foil. I rolled the asparagus in salt, pepper and garlic then sprinkled the parm and roasted in oven at 325 for about 18 min. This was a huge hit, every spear was devoured. Thank You for sharing

Asparagus with Junk

MMMMMMMMMMMMMMM..........this was soo good. I made this for Easter dinner to go with Cola Easter Ham (recipe on this site) and the asparagus went perfect with the ham. I roasted the asparagus in the oven for about 18 min at 325 on top rack. I don't care for asparagus steamed I prefer it roasted so I simply skipped the steaming step of this recipe. The bread crumbs browned nicely. Thank You for sharing.
