Irish Soda Bread Cookies
Just made these today for an early St. Pat's Day treat. They were delicious, although I got 30 cookies (not 36) rolled by hand. I added a little extra buttermilk, but then it got too sticky and I had to go back and add in some more flour. Might have had to do with the fact that I was handling the dough by hand rather than using cookie cutters. Also, subbed raisins for currants, because that's how my family has always made soda bread.

Banana Banana Bread
I've made this several times, and it is delicious. I make half the recipe, and usually bake it at 325F in a mini-muffin pan (yields 24) for about 15 minutes (set the timer for 12 min and keep checking). My 4-yr old son gobbles them up, and I like sending the homemade treats. I'll even pack a few for his teachers tomorrow. Would probably be yummy with walnuts, too!

Lemon Pie Bars
I made these for my son's teacher without ever having tried a lemon bar myself, so I have nothing to compare to. That said, I made these with the 50% increase in filling ingredients. My only issue is that I wound up undercooking the cookie crust because I was worried about overcooking (as a few reviewers had mentioned). These tasted fantastic after setting fully overnight in the fridge! I would definitely make again. For the filling at 150%, use the following: 3/8 c flour (as opposed to the remaining 1/4), 6 eggs, 2 1/4 c sugar, 3/4 c lemon juice.
