Award Winning Soft Chocolate Chip Cookies

Baked Honey Mustard Chicken

I've used this recipe about 3 times now and it is one of the easiest dishes to whip up! All my guests have loved it. I paired with a Brushcetta pasta dish from this site and it turned out wonderfully!

Mock Lemon Chiffon Cake

I made this for a co-worker's birthday and it was gone in minutes! I used a lemon cake mix and used half of the vanilla pudding mix. I also made fresh whipped cream and added lemon pudding mix (generic brand) and used 1/2 of this mix to put it in between cakes. For the outer frosting, I made fresh whipped cream and added a table spoon of lemon juice and 1/2 cream cheese so it will hold. Very tasty!!

Fra Diavolo Sauce With Pasta

I made this for my husband and he said it's one of the best things I've ever made. Of course I made some minor changes. Instead of scallop I added turkey smoked sausages. For the sauce, I added some basil, oregano and doubled the chili pepper as we love spicy stuff! I even added 1/2T of balsamic vinegar. I also sauteed the garlic with onions, mushrooms, and green pepper for extra flavor! just delicious!

Downeast Maine Pumpkin Bread

This was one of the BEST pumpkin bread ever! I made it for Thanksgiving and everyone loved it! They all said it was very moist and delicious! I did take some of the advice and did the following: Used organic pumpkin puree, used 1/2 cup oil 1/2 cup butter, only used 2 cups sugar, 1 teaspoon vanilla. Baked in a 9x5 loaf for 65 minutes mix of 1/3 cup water, 1/4 cup milk and the rest in a 9 inch cake pan for 30 minutes. Just perfect! Next time I will try making it with 1 cup white sugar and 1 cup brown sugar.

Double Layer Pumpkin Cheesecake

I made this twice this Thanksgiving! The first time, it cracked a little but the second time it came out perfect! I added an additional 1/4C puree, 1/2t of pumpkin spice and additional clove. I reduced a a little on the sugar. it was a hit!

Baked Penne with Italian Sausage

I made a healthier version of this great pasta dish! Used whole grain wheat penne. Use 1 can of spaghetti sauce with mushrooms instead of the tomato sauce, diced tomatos, and paste. After cooking the onion in garlic and oil, added mushrooms and a tablespoon of red pepper flakes for a little kick! Then added white wine, a teaspoon of basil, oregano and the pasta sauce along with 1/2 cup of frozen spinach and 2 tablespoon of grated paremesan. Used only 1.5 cup of low skim mozzarella and baked for 15 minutes. My husband enjoyed it!

Cream Cheese Pound Cake III

This turned out great! I made some modifications. Used 2 1/2 cups sugar and low fat cream cheese. The out layer was too dry after baking 1 hour 25 min at 325. Next time I will make following changes. Use 1 1/4 cups butter 1/4c buttermilk, 2 1/4c sugar, 5 eggs and bake in cold oven for 90 min at 300 degrees.
