Marinated Rosemary Lemon Chicken

I cooked the chicken on my newest gadget (a George Foreman grill), and it only took 9 minutes! I only had four hours to marinade the chicken (not overnight). But, it turned out great. My husband thought the chicken was moist and delicious (he even commented on how moist the leftovers were the next day). My eleven month old daughter also gave it two thumbs up. Thanks Barbara for this quick and tasty recipe.

Stuffed Shells I

This dish turned out great (though I was out of oregano and parsley). I typically use ricotta in my stuffed shells/manicotti recipes, however I thought I would give this cottage cheese recipe a try and it was a refreshing change. When I made the recipe, it filled a 10x13 and an 8x8 baking dish. I used the 26 oz of sauce to coat and cover the 10x13 baking dish, then used an additional 13 oz of sauce to coat and cover the 8x8 baking dish. I still had noodles left over (but had used all of the cheese mixture). We will be making this again.

Best Spinach Dip Ever

Best ever says it all!! I loved it (as did all my party guests), and I don't eat anything with mayonnaise. Luckily, I didn't put all of the dip out at the party. So, I enjoyed the "leftovers" for breakfast and lunch the next day. I will be making this recipe for years to come!!

Classic Peanut Butter Cookies

I made these cookies last night and they were yummy! I added an extra 1/2 cup peanut butter, 1 tsp vanilla, and rolled them in sugar. Thanks for the recipe Shirley!

We love this recipe. One year I received it as a Christmas gift from my sister-in-law. The next year I gave it as gifts to my mother, sister, and co-workers. I don't make any changes to the recipe.

Chicken Pot Pie IX

One of our absolute favorites (and I don't like chicken) and a crowd pleaser. Everyone asks for the recipe. I have added potatoes, which is also very good but changes the flavor. I prefer the recipe as is. I find the normal pie dish too small, so I save the large tins from Costco pot pies. I roll the pie crust a little larger to fit.

Potato Latkes I

We love these latkes. I followed other user's comments and only use one egg, 1/2 tsp. salt, and canola oil. I squeeze out all of the juice from the potatoes and onion though cloth. Top off with apple butter and a little sour cream, you can't go wrong!
