Portabella Burgers with Avocado Spread

Absolutely delicious. My wife said that something as good as this could make her a vegetarian. Recently, I bought some Portabellas that were huge; too large for buns. So, instead of grilling onion slices, I caramelized the onions and topped the avocado spread mushroom with them and the red peppers. I honestly like it better without the bread.

G's Flank Steak Marinade

I sometimes substitute red pepper flakes for the pepper, lime juice for the lemon, add about a 1/4 cup chopped cilantro, and 1 tbsp fish sauce for a Thai twist. I also use G's recipe with Skirt Steak and Brisket.

Tuna Casserole I

Like PUCKIE25 I mixed the soup and frozen peas together. But, instead of Potato Chips I substituted panko which reduced the fat considerably. Also, instead of cheddar, I lightly covered the layers with Pecorino-Romano, which added a little saltiness but still gave the casserole a nice cheesy flavor. Good recipe, I'll make it again.

Cholay (Curried Chickpeas)

Very good! My wife & I both really enjoyed this. Because we were having rice with it, I only used half of the chickpeas to lower the carbs, but I would definitely make this again.

Poblano Chicken Enchilada Casserole

My wife & I loved this dish. I followed the recipe with the exception of substituting plain yogurt for the sour cream (didn't have any on hand); I wouldn't change a thing. And for those who are wondering, yes, our friends to the south do eat mushrooms as do most cultures.

Jalapeno Salsa

Great recipe! You could swear it was made with tomatillos. As others have mentioned, the heat is moderately hot. Since my wife has a much lower heat tolerance than I, I made a separate batch, substituting 3 Anaheim peppers for the 12 jalapenos; she also thought it delicious. Definitely a keeper.

Habanero Salsa

Good stuff! I know most people get irritated when someone changes to a recipe and then rates it, but I only substituted 4 Trinidad Scorpions (currently the hottest pepper in the world) for the hananeros called for (and left in the seeds) because I like heat... A lot of heat. Now the Carolina Reaper has been rated the hottest pepper so as soon as they ripen I'll give this recipe another go. I think I'll also drain the tomatoes first and possibly add some tomato paste instead of the sugar to make the sauce more thicker.

My wife and I really enjoyed this recipe; it was so simple, yet so good. I only made one change (I can hear the growls now): I substituted vegetable broth for the chicken since we're vegetarians. During this week of record lows, it really hit the spot!

Chili Rellenos Casserole

We really like this recipe and now have it regularly; it so much simpler than making regular rellenos and tastes just as good. I've made it with both New Mexico and Poblano peppers (I usually use about 12 peppers) and both are equally delicious. Also, I use Queso de Chihuahua instead of Jack.

Zesty Slow Cooker Chicken Barbecue

Excellent recipe. I followed all the directions except, since I was out of Italian Dressing (I know, who runs out of Italian dressing), I instead used Newman's Own Balsam Vinegar and Oil. I set my cooker to low and when I was able to shred the chicken I turned it down to low and let it set in the sauce for a while. For my barbecue sauce I used Bone Sucking Sauce.
