Spicy Tomato and Lentil Soup

This recipe gets 5 stars based on the following modifications I made: 1/2 onion is plenty, 1 28 oz can tomatoes, 2 cups water (without the additional water and tomatoes it is way too thick), 1/2 tsp red pepper flakes (or more if you like heat) 1 1/2 tsp cumin. The suggestion of sour cream as a topping is a good one. I blend this with a hand blender, but didn't blend it smooth - I think it's better with a bit of body left to the lentils. Enjoy!

Buttermilk Pancakes II

These are perfect pancakes. Very light and tender. I put the leftovers in the fridge and 2 days later they were just as good when rewarmed. I added a little more milk to thin them slightly.

Honey Whole Wheat Bread

This is the absolute Best whole wheat bread ever! I have used it many times and agree with others: change to 1/2 c honey, use 1 cup white and 2 cups whole wheat bread flour and substitute melted butter for oil & DON'T try doubling it lol!

Easy Broccoli Quiche

I agree with many others who review this recipe. It has great potential, but needs a fair bit of tweaking: less milk 3/4 c is plenty or use 2 pie shells fresh broccoli not frozen 1/2 onion mixture of cheeses - a cheddar adds some bite I added 1//2 red pepper for visual interest I added ham on one side (for hubby) Bake at 425 for 15 min, then 350 1/2 With changes it gets 5 stars :) Very yummy!
