Herb Rubbed Sirloin Tip Roast

Usually I ruin meat because I'm not much of a carnivore so when it comes to expensive cuts of meat, I leave that part of cooking to hubby. This is one I cooked myself and he actually raved about what a good flavor it had. I had kosher salt but it was the coarse kind and the recipe doesn't specify so I used sea salt instead. I was afraid the coarse salt would be too much.

Tofu Tacos I

I've never cooked with tofu before, and I was actually surprised that it was so good, or at least it was in this recipe. The dedicated carnivores thought these tacos were the bomb. Imagine that! I froze the tofu first, as some suggested, though not for a full 72 hours and it came out fine. I sprinkled it with taco seasoning, and let it set in the frige awhile, but otherwise followed the recipe exactly. Thanks for sharing this. I'll use it often.

Portobello Penne Pasta Casserole

This was exceptionally good, and believe me I am a picky, picky eater! The sauce was wonderful. I've never liked spinach but in this recipe it barely noticable. Also, it makes for an attractive dish that I would be proud to serve to company.

Simple BBQ Ribs

I used these on boneless beef ribs. Turned out very tender, but a little dry because I didn't add sauce toward the end of baking like others recommended. I will use this recipe again.

45 min. way too long. Beans turn to mush. Taste was ok, but won't make again. Quick way to make baked beans, though.

Baked Teriyaki Chicken

Good recipe. Not as sweet as I feared with all that sugar. The sauce didn't thicken very much, but that's okay. I just dipped the thighs in it, and then poured it in the dish rather than basting it every ten minutes. Turned it once, and that's it. Served it with sticky rice and stirred fried veggies.

Toasted Garlic Bread

This was a meal in itself! I used a mix of parmesan and mozzarella. Think the olive oil really adds something to it. I will no longer buy the store bought garlic bread.

Slow Cooker Chile Verde

Buffalo Chicken Wings III

Made these for Superbowl Sunday, and everyone enjoyed them. Doubled the sauce and ended up with too much. They are not hot at all, so if you like your wings hot this is not the recipe for you.

Extra Special Banana Pudding

This was yummy! It definitely didn't take 45 min to brown the coconut mixture. It would have burned if left in that long. I wonder how to turn the coconut mixture into a regular pie crust? I thought about trying it but decided to stay with the recipe.

Cajun Dirty Rice

Hubby says this is an eight, though a bit hot, and he is of Mexican heritage (though I am not and thought it was merely spicy.) I doubled the rice mix, as others recommended, otherwise there would be way too much meat. And beware, this makes a LOT. I will have to freeze half of it.

Mrs Espy's Enchilada Sauce

I was actually quite surprised. This was VERY good, and I am very hard to please when it comes to enchilada sauce. I did change it a little. I doubled the recipe. Like others, I used chicken broth. I used crushed garlic. But most importantly I used El Pato Jalapeno tomato sauce and a can of Herdez red salsa. I was a little hesitant to use the Jalapeno tomato sauce since it is very hot, and hubby hollers when I use it in anything (and he's of Mexican heritage, go figure.) I would have used El Pato hot style tomato sauce (in the yellow can) but didn't have any. But actually, with the chicken broth and water, it was perfect and hubby really liked it. Oh, and come to think of it, I didn't double the chili powder! An oversight on my part while I was doubling the recipe. Thanks Brenda. I will no longer use the can or packaged stuff, and the ingredients are things I almost always have in my kitchen.
