Sweet Corn Bread

Delicious and super easy. I used medium grind cornmeal, it added an extra delicious texture, a little bit of crunch! It was slightly crumbly and sweet enough but not like cake. I'm sure once I make it a few more times and tweak the ingredients a bit I'll come up with the perfect corn bread for my family. They really don't want me to mess with it though because everyone loved it so much!

Simple Whole Wheat Bread

I've decided to start making my own bread as a potentially healthier option for my family. I tried this recipe and it actually turned out amazing my first time. I followed the directions exactly and will continue to do so until I am a more experienced bread maker, but for a first timer, I highly recommend this recipe. Sweet, delicious and the stone ground whole wheat adds a little nutrition! Thanks for the great recipe!

Robbi's M&M Cookies

We had large bag of M&M's left so I tried this recipe with my own twist. Instead of Shortening I used 1 cup (250g) of coconut oil and used 2 cups of flour with 1/2 cup ground flax seed for a somewhat healthy twist. I also left out the salt and mixed all the M&M's in with the dough. Cooked them on convection @ 350F for 10 minutes. They were slightly crispy on the edges and fluffy and soft on the inside! There is a mild coconut flavor but overall just very yummy!

Banana Muffins II

Delicious and quick, I mash 3 bananas at a time when they are not going to be consumed fast enough and freeze in zip lock bags for use at a later date. It makes these muffins quick and easy for an afternoon snack for the kids or a lunch box snack for school. I add a quarter cup of chocolate chips and half cup of walnuts for extra nutrition. Just wet the dry ingredients as the recipe suggests otherwise they will be dry!

Baked Teriyaki Chicken

We have used this recipe on every kind of meat, pork ribs marinated and basted on the bbq, chicken breasts and thighs done casserole style, meatballs in the crock pot, even chicken thighs marinated, basted over the fire....yum! It's always a hit with our family of 6, its a quick easy weeknight dish! We always double the sauce, use whatever kind of vinegar we have in the cupboard and use fresh grated ginger to enhance the ginger taste. I've passed this recipe onto family and friends and it's become a regular in all households.
