Chicken Tikka Masala

Absolutely delicious.......with a few modifications! I used boneless, skinless thighs and marinade for 24 hours. Reduce salt to 1 tsp each for marinade and sauce. I added a can of fire roasted tomatoes with garlic to the sauce. Also, added some curry powder to sauce and marinade because I love it. Served over yellow rice with peas. Sooo good:)

Buffalo Style Chicken Pizza

Yummy pizza! I substituted chopped up Perdue pre-cooked chicken breast pieces and used a thin crust boboli. Everyone enjoyed it. I'll put it in my dinner rotation:)

I made this today for Hot Fudge parfaits....YUM. I used half & half instead of cream & only about 2/3 c. Thick, fudgy, gooey...just the way we like it!

Pork Tenderloin with Dijon Marsala Sauce

I used this sauce over grilled tuna...yummy! I'll have to add mushrooms next time. I would have given 5 stars but I wish the sauce was a bit thicker. I added some cornstarch w/h20 to thicken mine.

Garlic Ranch Chicken

I used the powdered packet of ranch dressing, mixed it with some olive oil & white wine vinegar. I added the chicken, basil & garlic to this & marinaded about 3 hours. Fantastic on the grill!!!

Easy Peach Crisp I

Everyone in my family gobbled this up...seconds and thirds, too! Delicious with vanilla ice cream. I made this recipe and the "Award Winning Peaches and Cream Pie" this weekend. This one is far far superior! Thanks!

hmmmm...I'm very surprised this received such great reviews. For one, it is absolutely nothing like a pie. Secondly, it just doesn't have a ton of flavor. Too bad! I was expecting so much from this. I didn't even want to bring the leftovers to work. Sorry.

Beef Tenderloin with Horseradish-and-Roasted Garlic Crust

oh my gosh...I'm not even a big beef lover but we made this tonight for New Year's eve din & it was fantastic. We did splurge for the cut of meat. Even my 8 & 11 year old LOVED it. It melts it your mouth. First: sear at 500 for 5-10 min then cook at 400 til internal temp of 140. YUM!

Chicken Riggies II

This dish is one of our favorites! Although, it is only for a rare occasion since it's so rich. Before frying, I dredge the chicken pieces thru some flour mixed w/a bit of salt & pepper. Also, add slices of black olives (when tossing in the peppers),if desired. Can also be made with shrimp instead of chicken!
