Pina Colada Punch

I made this punch for our square dance club's luau dance and it was a huge hit. I adjusted the recipe slightly - 3 quarts vanilla ice cream (2 x 1.5 qt container), 20 oz crushed pineapple (including the juice), 18 oz cream of coconut, 80 oz pineapple juice (probably could have used all of the two 46 oz cans in hindsight), and 4 liters 7Up. I mixed everything but the 7Up the night before and froze it in an 8 qt plastic container (mixture filled it about 3/4 full - 6 qts). Put it in the fridge about 4 hours before the dance to let it thaw a bit. Scooped the semi frozen mixture into the punch bowl and gradually added the 7Up while whisking to break up the clumps. Had a nice slushy / icy texture and terrific taste. Made 2 full punch bowls full. P.S. No rum - but it was still wonderful!

Macadamia Lemon Bars

The crust is so wonderful I could eat it all by itself as a cookie! I used 1 whole lemon, which gave me 3 T of juice and a good 2 t of grated rind. I accidentally put the 2T of chopped macadamia nuts in the filling, so went ahead and sprinkled an additional 2T on top. My husband initially did not want to try them. But once he tried them decided they are a "keeper".

Easy Mandarin Orange Cheesecake

While this has cream cheese in the recipe, it is more like a fluffy cream pie. I used a store bought crust but did buy and whip cream. Nice flavor but probably not a staple in my recipe box.

Marzetti® Hawaiian Slaw

I bought two bags of pre-shredded cole slaw. In hindsight I would have shredded a cabbage and some carrots as I had to pick out big chunks of cabbage that did not properly shred. I ended up with 10 cups of cabbage. With that, I used a 20 oz can of crushed / drained pineapple, 3/4 cup chopped pecans, 3/4 cup coconut, 2/3 cup finely diced dried tropical fruit (I diced), and a 15 oz jar of Marzetti slaw dressing. I made it the night before to let the dry ingredients soak up the dressing. It made almost 2 quarts of finished slaw. It had a nice flavor and I will make it again - but will probably make my own slaw dressing as I was a bit dissapointed with the flavor of the Marzetti dressing.

Orange Meltaway Cookies

As others suggested, I double the orange extract to 2 t and also went a bit heavy on the grated orange zest. The cookies have a good flavor and are a nice break from the "old standards" cookies.

Red Slush Punch

This punch was a hit - had multiple people ask me for the recipe. Based on other comments, I reduced the sugar from 4 cups to 2 1/2 cups. And I pureed a 1 pound package of strawberries and added them to the mixture for a bit of "real" strawberry flavor.
