Coconut Cream Cake I

Reviewed: Mar. 5, 2013
Good cake, but little coconut flavor. Tasted like boxed white cake covered in shredded coconut. Nice and moist though.

Apple-Leek Pork Chops

Reviewed: Jun. 19, 2012
Eh....the apples combined with the leeks and other spices didn't work for me. I didn't eat any of them so it was kind of a waste. The pork chops and rosemary were good though.

Chai Cupcakes

Reviewed: Mar. 4, 2012
DO NOT MAKE THIS CUPCAKE without modifying the recipe a significant amount!! Everyone's right, it's waaay too runny. I ended up with closer to 2 cups of flour. I also added 2 eggs. These cupcakes were pretty bland, despite me adding even more spices. They have a nice chai smell and faint chai taste, and are a lovely color, but I wouldn't enjoy them without frosting--that's how unflavorful they are. I recommend trying a different recipe...

Red Lentil Curry

Reviewed: Aug. 8, 2011
Really spicy. I like spicy food a lot, but I was cooking for my whole family, and my mom can't handle spicy things, so it would have been nice to at least say in the description how spicy it is. Now, we have been to India, and my little sister was actually adopted from India and looooves spicy Indian food and even she acknowledged that "she could see why it would be too spicy for mom." I followed the directions exactly. Maybe it's the type of curry paste I used? Aside from the spice, this is a pretty easy, tasty recipe. Four stars, took a star off for the lack of spice warning. Mom just has to use lots of yogurt with her serving :)

Easy Peach Crisp II

Reviewed: Jul. 21, 2011
This made a LOT of topping (I had leftovers) and 29 oz of sliced peaches would not even cover the bottom of my 13 x 9 inch pan...so that was a little weird. i switched it to an 8 x 8 glass baking dish and then STILL barely had enough, so i tossed in some blueberries too to fill it up. Other than those proportion issues, this tasted great...the topping was delicious (despite how frustrating it was to get that sand-like, crumbly texture) and it was fairly simple.

GA Peach Pound Cake

Reviewed: Jul. 11, 2011
This recipe was awesome! I followed the directions and recipe exactly (except I used canned peaches--it took about one and a half 15 oz cans) and it made two loaves. Following other's directions, I baked them at 325 degrees for 60 minutes and they were perfectly done. The peaches did mostly sink to the bottom despite my coating them with flour, but honestly this did not stop me from devouring four pieces in about 15 minutes. Super moist and delicious!

Whole Wheat Blueberry Pancakes

Reviewed: May 8, 2011
Good recipe! I'll definitely make it again, but next time I'll make more--I gave it 4 stars because the recipe as is would make absurdly small pancakes (like, barely palm-sized) if you tried to make 10 out of it, this recipe supposedly yields. I also added 1/4 tsp cinnamon and 1/2 tsp vanilla.

The Best Banana Bread

Reviewed: Mar. 29, 2011
This recipe was awesome, and so easy! My parents, siblings, and boyfriend have been devouring it. Soo good heated with butter, and the consistency of this bread is the best I've ever had. Moist, not too crumbly, rich. My only changes were (I doubled the recipe): I didn't have margarine or very much butter, so I had to improvise and use a mixture of butter and applesauce for shortening. I also added 1 tsp of ground cinnamon and 1/4 tsp ground cloves. Helpful notes: I found that 2 whole bananas=1 cup mashed banana. I made 1 loaf and 12 muffins--the muffins were done in about 25 minutes.
