Mom's Country Gravy
Like one of the other reviewers said, this is a good start. In my family this gravy was always made with pan drippings. Especially good with fried chicken drippings, although I have made it with vegetable oil with good results as well. The biggest difference is my mom always used canned milk mixed with equal amounts of water and I do too. It seems to give the gravy a richer taste. I also cut back on the black pepper. And as another reviewer stated the roux has to be cooked long enough that you don't get a raw floury taste. Where my mom came from this was called country gravy.

Mom's Zucchini Bread
Absolutely the best zucchini bread I have ever made!! I bake a lot and had not been satisfied with any of the zucchini breads I had tried. When I found this one I found the recipe I will use from now on. I did substitute a cup of whole wheat flour for part op the white and i used 2/3 cup of apple sauce and 1/3 cup of oil to cut down on the fat. It came out excellent. Also I covered the loaves with a tent of foil the last 10 minutes of cooking, I do that with most quick breads I make to keep them from over browning. My husband even liked this bread and he will hardly eat anything that is green, let alone zucchini and if you say low fat he says no thanks, but not this time. Thanks for such a great recipe.

Chocolate Zucchini Cake III
Just an update on my review from last year. The cake is still excellent and everyone still loves it, but I wanted to let you know that it is also now a blue ribbon winner! I entered it in the chocolate cake category at our county fair. I frosted it with a vanilla powdered sugar frosting and it took FIRST place. Just thought you would like to know. Thanks a gain for the terrific recipe and new family favorite. P. S. My husband is very finicky about vegetables even when they're in breads or cakes and he really loves this cake.
