Cornbread Muffins I
I really liked these muffins. I used canned creamed corn (3/4 c.) instead of corn kernals and bumped up the cornmeal to a full cup to make up for the liquid in the creamed corn. They turned out really well - very moist and full of flavor!

Ninety Minute Cinnamon Rolls
Just made these this morning and they were delicious! I only made one alteration - I added about 3/4 c. more flour, because I didn't knead by hand (I used my mixer with the dough hook). It needed a little more flour to "climb the hook" and clean the bowl. The balance of butter, sugar, and cinnamon in the filling was great - they weren't too sweet. The flavor was excellent! On the recommendation of others, I did put a rimmed baking sheet under my muffin tin, to catch drips. Oops, I lied - I made two alterations; I used butter instead of margarine.

Best Marinara Sauce Yet
I made a few changes: no parsley (I didn't have any, so the sauce probably would have been even better with it); subbed 1 tsp. garlic powder for the clove of garlic (I didn't have any fresh garlic); added 1 tbsp. sugar. I sauteed the onions in a stock pot, then added all the ingredients right into the pot and used an immersion blender. It could not have been easier, and the sauce was delicious!
