To Die For Blueberry Muffins

Reviewed: Nov. 8, 2008
This was SO good! I doubled the recipe and it made 8 jumbo sized muffins. Baked for 25 min. Also, I used brown instead of white sugar for the topping. Even with only a single recipe of topping for a double recipe of muffins, the topping made WAY too much. I'd say, 1/2 topping to 2x recipe is a better ratio. Also, I used frozen blueberries (thawed and coated in flour) and they tasted fabulous.

Angel's Pasta

Reviewed: Jul. 27, 2008
I followed the recipe, except used one 14.5 oz can of drained, diced tomatoes instead of the fresh tomatoes. It was great! I'd say it feeds 4 rather than 6. We tried one serving with parmesan cheese, but it didn't taste as "fresh" as with the mozzarella.

Sugar Coated Pecans

Made with other reviewer's mods: 2 egg whites, 1 T. vanilla instead of water, and 1 tsp. cinnamon. Yum!

These were DELICIOUS! I omitted the walnuts and baked for 27 minutes. It's hard not to eat the entire pan full!

Chicken and Broccoli Braid

Reviewed: Aug. 26, 2008
This is just like the Pampered Chef recipe. I used green pepper instead of red and no dill or almonds, but it was still fabulous!

Very easy and extremely yummy. I did microwave the frosting for 30 seconds and it easily poured on top.

I needed a full 9x13 pan to fit 2 lbs of potatoes. Other than that, this recipe is FANTASTIC!

Apple Crisp II

Reviewed: Sep. 9, 2009
Do NOT double the topping - the recipe makes plenty. I did not add water, as my apples had plenty of juice after slicing. Very yummy!

Danish Pastry Apple Bars II

Reviewed: Sep. 22, 2009
I made this exactly as written except about 1 1/2 tsp Pampered Chef Cinnamon Plus instead of 2 tsp cinnamon. The almond flavor of the glaze was great! I used my Kitchen Aid to do most of the mixing and kneading of the dough, which worked out great.

Potato, Broccoli and Cheese Soup

Reviewed: Jan. 10, 2010
Followed BBFITZ's advice and only used 1 cup chopped onion, 1 lb. frozen broccoli (cooked in microwave) and chicken stock in place of water/bouillon. Hubby had FOUR bowls full. I think it's a keeper...

These were really good! We halved the recipe and it was plenty for the 4 of us to have more than one.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Mar. 30, 2010
I've made this several times as is, and it's become a "go to" recipe. 4 hours on slow is correct! Great served with Garlic Red Potatoes. Tender and juicy - really really a treat. I also make this as a freezer meal - put the meat and sauce into a ziplock, freeze, thaw and dump into slow cooker. Easy peasy lemon squeezy.

Bars were good but thin. Might be better in a 9x9 pan.

Mini Meatball Subs

Reviewed: Sep. 9, 2009
These were surprisingly good! I found one recipe made about 15 meatballs. We used hoagie buns and put 3-4 balls per sandwich. I also cut the amount of green pepper in half, as they were getting a little "chunky". Also, we only used about 1/4 the amount of sauce.

Fried Rice with Cilantro

Reviewed: Jul. 22, 2007
Very good rice! Important note: the rice measurement should be for UNCOOKED rice, not cooked rice. I made this recipe measuring out 2 cups cooked rice and it was very oily. Use 2 cups uncooked rice to get the proper consistancy. I doubled this to freeze for OAMC and it is great!

Chocolate Chip Banana Muffins

Reviewed: Sep. 14, 2008
I used 3/4 cup sour cream instead of yogurt, and it worked out great. I also made jumbo muffins with this recipe and increased baking time to 27 minutes. The chunks of banana left in the muffins is gooey and delicious!
