Spicy Italian Salad

I really liked this recipe. I used 1/2 canola, and 1/2 olive oils. I also cut up all the veggies real small, more chopped. Then marinated all the veggies overnight. It almost has "slaw" consistency. Then before serving, I made some more dressing, and mixed romaine with the veggies, and a little more dressing, and fresh pepper. I served with Romano on the side. I was half tempted to serve the "slaw" on top of the romaine, because it was so colorful. Might do that next time.

BLT Salad

This was way easy, as I bought precut romaine lettuce and precooked bacon. I didnt use a food processor to mix dressing, and it turned out fine. I used low fat mayo, tasted great! I actually bought the croutons, but forgot to put them in...we really didnt miss them. I will make this again...very very easy.

Jalapeno-Blue Cheese Burgers

Flavorful. I made a day these in advance, so was very stressfree the day of my gathering. Surprisingly they were pretty spicy. I thought removing all the seeds would cool them down, but they were good, and had a kick to them. Was afraid of all the blue cheese in them, but when I was eating one, I could not even tell that blue cheese was in them.

Creamy Cauliflower Salad

This was very good, loved the texture. Made with Low Fat Mayo. Husband helped me make it and was not so sure about the recipe until he tried it! Was delish. Made for Mother's Day, was different and everyone enjoyed it. Will definately make again.

Baked Spaghetti Squash Lasagna Style

Very very good. I did not have bullion, so I skipped it. I also did not have much shredded mozz, so I cut up some fresh mozz, and added that. I used a ton of crushed red pepper, and sauteed garlic, and then just used a jar spaghetti sauce. My spaghetti sauce happened to be RAO Sausage variety. The dish was very good. I also microwaved my squash to make cooking easier. Great starter recipe that can be added to, or even made easier by using prepared sauce! YUM

Turkey Tenderloins

Awesome recipe...made exactly as instructed. Have already made this twice, as I really like it and it is very healthy. I have another pack of turkey tenderloins in the freezer for my 3rd attempt. Made some brown rice and veggies and served with a raspberry chipotle sauce...mmm mmm good!

Asparagus Quiche

I have never made a quiche, and this made me look like a pro. I followed the recipe, and it turned out great! Made it for a Mother's Day luncheon. I made it late Saturday night, then covered it and left it out over night. It was the perfect temperature by Sunday morning.

Chiles Rellenos Pie

This was different, and was well recieved. I think people were surprsed. I grilled the chicken for this recipe on the grill, and also grilled the peppers. Prepared the dish the night before and left in teh fridge over night. Brought back to room temperature, then backed it the next day.

Cheesy Ham and Hash Brown Casserole

This is probably the best hashbrown cassarole I have ever had. I think the key is the "sharp cheddar" as opposed to other cheeses. Easy to make. I prepared it two days in advance, then on the morning of my luncheon, I removed it from the refrigerator to get it back to room temp before baking....

Cold Macaroni and Tuna Salad

Cashew Avocado Chicken Salad

I made this for a reunion, and everyone lovedit. A couple people commented that this was the BEST chicken salad they every had. I am a very picky Chicken Salad person and loved this recipe.

Portobello Mushroom Burgers

This was great, and very easy to prepare. I didn't have any provolone. We ate ours on buns with grilled onions and parmesean. Will try the provolone next time. I've tried to make portobellos before and they always turned out dry. These were just as good, if not better than any restaurant mushrooms I've had.
