About this Cook
My name is Karen and I cook for me and my husband. I try to cook healthy. I enjoy cooking and absolutely love this site, and recommend it to everyone I know!
My favorite things to cook
I like seafood, and love to grill. I would like to get some good recipes for tapas and have a get together with some hearty appetizers. Sounds like fun, but also sounds like I would be constantly cooking, and would not be able to enjoy myself.
My favorite family cooking traditions
I dont have any family cooking traditions...No recipes passed down from generations....nothing like that...
My cooking triumphs
I really like cooking and feel pretty comfortable in the kitchen. I like trying new things...
My cooking tragedies
I made T-giving dinner at my house. It was not a tragedy...but....I got all the recipes from this site, and for some reason, they all had large amounts of garlic in was a very garlicky Thanksgiving! ;)

Moroccan Fig Pork Roast
I had around a 2.5-3 lb pork roast, it only took an hour in the oven at 350. I didn't have garam masala or tumeric on hand, so I skipped them. Also even though my pork roast was half the size of the recipe, I kept all the other measurements the same. It was really fabulous. So good, and so easy. I did as one of the reviewers said, and coated the roast in kosher salt overnight. I only had a chance to immediately cook the roast after applying the rub. Next time, I will let the roast sit with the rub on for an hour or so before preparing. I also think this would be awesome with a turkey breast, or turkey tenderloins. I would make this for guests.

Fruit Punch
Maybe for a child's party this recipe is ok. But, I made it for a work event, celebrating a work anniversary, and I was embarrassed that I served it. I think it would fair much better at a child's event.

Italian White Bean and Pancetta Soup
I halved the recipe for my husband and I. This is definately company worthy. I will be making again. It might have been better the second day. I think the next time, I may try to make it in the crockpot. I left out the added salt, as I thought the pancetta and chicken stock was enough salt. I am glad I left that out.
