Oven Fried Chicken III

I will be making this chicken recipe often, it's that yummy! I subbed the thyme with Mrs. Dash and used 1/2 cup mayo and 1/2 cup half and half (I needed to use it up). I used a cookie cooling rack on top of a foil (sprayed )lined cookie sheet as others suggested. The chicken (boneless) was so tender you could cut it easily with a fork. Thanks for the recipe!

Fantastic! I followed others suggestions. I added Italian seasoning, garlic salt, onion salt and granulated garlic to the dough with garlic and Italian sprinkled on top of the butter. Used one less T. of water. When the dough was done, I put it in a bowl in the fridge for 3 hours while I was gone. We are not fans of pepperoni and so I didn't have any. I made a sloppy joe filling. Rolled dough out as stated and cut it into 4ths. Put a heaping 1/2 cup on each plus cheese, then folded over and under like pie crust and used a fork to seal. Let rest on the stove for 15 minutes. These bake bigger so next time I will cut it into 6 pieces. My dh said "don't make them any other way!" Oh but the ideas are endless. I LOVED the dough, can't wait to dip it in spaghetti sauce. Thank you!

Best Ever Popcorn Balls

Great and easy! My corn syrup was old and so were the marshmallows (not hard). So I made 1/2 a recipe. Following other tips this is what I did for 1/2 recipe: added vanilla (instead of water), salt and used 1 cup powdered sugar. Simmered mixture 2 minutes after it came to a boil. Spooned it into a 12 cup sprayed muffin tin. Sprayed my hands once and formed into balls (next time I will make 10). No problems! Tastes great too!

Refried Beans Without the Refry

GREAT! I have been wanting to make these for a long time, glad I did today! I removed 2 1/4 cups liquid too much and the beans were still a litle runny. Forgot the jalapeno. Used some onion/garlic salt, reduced total salt amount. Added 1 tsp chicken bouillon. Used more cumin. Next time I think I will add another cup of beans. Oh, and I used less pepper. Im going to heat them tomorrow to go with Lime Chicken Soft Tacos and Mexican Rice II. Also I used only 1 tsp pepper and my dh said beans were too peppery. I didn't.

Chocolate Chip Oatmeal Muffins

I've been making these for almost 20 yrs. To make them more healthy I changed it to 6T. butter, 1/2 cup brown sugar, 2 tsp. baking powder and 1 cup natural applesauce. I love choc chips but these taste even better with cinnamon chips if you can find them! They don't rise like other recipes but they are delicious as written.

Raspberry Streusel Muffins

I joined today just to comment on this recipe. Amazing! After reading reviews, I changed to 2/3 cup milk and 1 tsp. baking powder. I used 1/2 cup wild black caps and 1/2 cup huckleberries. Topping was great. A perfect muffin. Thank you!

Blueberry Scones

My dh loves blueberries but to me they are just good. I really enjoyed them in this recipe and will make it again! I used frozen berries and 1/2 tsp. cinnamon. You can grate the cold butter which makes it easier to cut into the flour. Yes the dough was sticky so next time I won't use all of the cream unless needed. I put half the dough on a floured counter, sprinkled flour on top and on my hands (tried to use only one hand). Tried to knead it but it was difficult. The other 1/2 I put on a floured cookie sheet and that was easier. Made 6" circles, didn't cut, spread a spoonful of milk on top then sprinkled on sugar. DH said they were not sweet and I said they are not supposed to be. They were just right. Soft, tender, light, tastey... If you need more sweet you can drizzle a glaze on them.

Pumpkin Rolls I

I have made these as few as 16 rolls and as many as 200 at a time, several times. The recipe is excellent as written. The pumpkin is for color and nutrition. I've made them with part whole wheat flour and/or part bread flour also. I've used fresh or canned pumpkin. Half a recipe fits in my bread machine and will make the 16 rolls. I don't spread the circles with butter but do butter the tops. FUN to make and a FANTASIC recipe! Thank you!

Orange Honey Garlic Chicken

I pan fried this great recipe. Fried thighs and strips until slightly browned on both sides. Then let it simmer in the sauce turning several times. Added more fresh squeezed orange juice. A little too salty, I didn't measure the soy. Next time I will double the sauce and taste test the soy before doubling it. I loved the flavor.

Fabulous Wet Burritos

WE loved these! I used ground elk, home canned salsa for the tomato soup, and 15oz. enchilada sauce. I put a handful of cheese on top of the meat before rolling up. Placed them into a 9x13 greased pan, poured the sauce mixture on top to cover completely, then sprinkled with some cheese. I baked them about 20 minutes. We like lettuce, tomato and avocado on top of ours.

Quick Yeast Rolls

These are so yummy, I ate 3 right out of the oven and wanted more! I used butter instead of shortening and dropped them by spoonfuls into a greased 8" x 12" pan. Mine baked 12 minutes. FAST, FLUFFY, DELICIOUS and EASY. I will be making these often since my bread machine broke. Thank you!

BBQ Chicken Calzones

I used crescent roll dough and had a hard time getting it shaped right. It stuck to the card board and the end of it was dark. I never buy crescent roll dough. Next time I will use the pizza dough or make dough from scratch. I used bacon but will leave it out next time. These tasted great. My dh liked the crescent crust.
