Sausage Balls

My wife has been making these for as long as I've known her. I love them. However, as much as I love sausage with cheese, you really don't need a pound of cheese to one pound of sausage. We use one 12 oz pack to one pound sausage AT MOST. Also, a dash of crushed red pepper is nice. Otherwise, 2 thumbs up!

I love it. My variation was to use Rotel with green chilis instead and not add the cayenne. My way was probably too hot for most but if you can stand the heat...

Roasted Eggplant and Garlic Hummus

I had an abundance of eggplant from my local farmers co-op so I thought I would try something different. I wish I hadn't. I apologize to those of you who like this recipe but I found it completely unedible. I don't know how any of the usual hummus additions like lemon juice, tahini, peppers etc.. could possibly help.

Roasted Vegetable Ratatouille

I loved this and so did my wife! However, I don't use a canned sauce when it is so simple to make one myself. Sautee a little onion and bell pepper, process approximately 4 tomatos until smooth and add them once onion and pepper is lightly cooked. Salt, pepper, fresh basil, fresh oregano, pinch of sage, pinch of sugar, simmer covered to blend flavors. Adjust seasonings to your taste but this only takes a few minutes to assemble. Then you can walk away while it simmers. The ratatouille was outstanding!!!

Absolutely outstanding! I cut back on the chili pepper a bit and had no molasses so I added extra honey. But I was otherwise true to this recipe. I will be making this again - my wife insists!

Traditional Mashed Potatoes

These potatoes are exactly as titled. Traditional. No fancy adders, and very, very good. I used about twice the amount of milk.
