Banana Pancakes I

Made it first time this morning for the grandkids and myself. Doubled the recipe. Excellent! I did add Vanilla but everything else the same. Used very ripe (over ripe) bananas. Very moist light pancake which I prefer over dry heavy pancakes for sure. Easily can add blueberies,chocolate chips and nuts to this! Definately a keeper recipe!

Chef John's Blueberry Muffins

I gave 4 stars because I didn't have some ingredients in the recipe so I substituted and used raspberry yogurt instead of sour cream and orange zest instead of lemon zest and added a tsp of vanilla. Everything else the same. Recipe made 18 muffins and turned out quite good and beautiful but a little on the dry side.

Cranberry Applesauce Muffins

The muffins are great. I used what I had on hand using homemade whole berry cranberry sauce and applesauce and using walnuts. Everything else is the same. Might add vanilla next time just to try it. Yummy for breakfast or anytime.

Apple Butter Cookies

Like other reviews mine didn't come out thick and puffy either. As the cookies baked they flattened out. I followed the recipe exactly so don't know what I did wrong. Maybe needs more flour? Good flavor and smells great. Think I will try the cookie bars as another reviewer said next time. I too make my own apple butter. Good way to use it up.

Penne Pasta with Spinach and Bacon

We have a similar recipe only we use linguine pasta. Instead of spinach we add green and black olives, minced garlic, and mushrooms (canned or fresh) to the cooked bacon sauteed together for a few minutes. Then add that to the cooked drained linguine with olive oil. Then we add fresh sliced tomatoes(roma, cherry or campri are best) and a lot of chopped green onions mixed in and then top with parmesan cheese to our liking.

Candy Cane Cookies I

I'm sorry but these were not very good to me. They fell apart so easy when transferring to the cookie sheet and even after baked. I don't like peppermint so opted on that. The flavor was bland even with the other extracts and tasted like flour. Have to sprinkle alot of sugar on top just to sweeten them.

Pumpkin Bread II

This bread is really good. I decided last minute to add 2 mashed bananas to the pumpkin cause they needed to be used and I also used pumpkin pie spice with cinnamon. It turned out yummy. I am sure the pumpkin alone is just as good. Oh and I baked in a 350 oven for only 1 hour. Perfect.

Scrumptious Salisbury Steak in Mushroom Gravy

I usually make meat patties like that but never tried poultry season in ground beef and sometimes use cream of mushroom soup but this recipe is by far a more flavorful tasty gravy. Served it with mashed potatoes. I had fresh mushrooms that needed to be used so that was the only thing I changed plus added 1 can of the mushrooms to go with the fresh. This is a quick easy meal and will make it again.

My Mom's Apple Sauce Cake

Love the cake. I didn't make it with rasins or walnuts cause I didn't have any and instead of 1/2 cup shortening I used 1/2 cup vegetable oil. Didn't frost it at all. The cake turned out moist the way I like it and my husband said it was very good also. We have a few apple trees and I make homemade applesauce often and used that. I might add homemade apple butter with the applesauce sometime.

Best Brownies

Very good. Followed recipe as written except didn't make the frosting because I had some leftover chocolate frosting to use up. The brownie itself was very moist not dried out like some get and still is as good the next day. Will make again.

Creamy Cream Cheese Frosting

I like the smooth creamy texture. I used the whole 8 oz creeam cheese though and a little more poweder sugar and still great. I also added just a drop of orange extract which I think compliments carrot cake. I made carrot cupcakes and with the frosting it was very good.

Seven Layer Tortilla Pie

Quick and simple recipe but it is missing something. I didn't have cilantro and used more salsa that I thought would of gave it more punch but it didn't. I already had this in the oven before I read reviews. I think I will try taco seasoning next time like some reviewers tried and that might help. I used refried beans and black beans and the Mexican Blend shredded cheese. I could only layer it 4 times for I don't have a deep dish pie plate and I put a flour tortilla on top last to be like a top crust and so the cheese wouldn't stick to the foil when baking. It tastes alright but a little too much beans and needs more salsa and cheese and possibly the Taco seasoning next time or taco meat. I don't like black beans but my husband does. I think I will also try it with shredded lettuce, more tomatoes, salsa, green onions and sour cream for toppings next time.

Ten Minute Enchilada Sauce

I haven't made enchiladas for awhile. My Mexican sister in law makes great enchiladas and gets her chili seasoning from Colorado. I could never get my enchiladas to taste like hers. I happened to have a package of corn tortillas in the fridge and thought to make enchiladas but was hesitant cause I am not very successful with them but decided to give it a try on my own but didn't have any sauce until I found this recipe and it turned out great. I used regular flour though and less oil and it was still good. Will use this recipe. Thank You!

White Chocolate Macadamia Nut Cookies III

My cookies didn't turn out as the picture shows. Not excactly what I was looking for but they are still ok. They are just like chocolate chip cookies only a different color chip. I omitted the almond extract and added more vanilla also. I am looking for a recipie that turns out as close to the pillsbury white chocolate chip macadamia cookie dough you buy in the store.

Slow Cooker Chicken Taco Soup

This is good. I made it with ground beef instead of chicken only cause I needed something quicker and on hand. It is just like the slow cooker taco soup. I omitted the corn. I used kidney beans, pinto beans and the black beans, all drained and chicken broth instead of the beer. I used one can of diced tomatos and discovered it was Italian style which I think added even more flavor and then added a small can of diced green chilies. Everything else I did the same. It is like chili but I think better. I cooked it on the stove instead of the slow cooker and it was done in less than a half hour. Tastes great the next day also.

Monster Cookies VI

I have to say I was a bit skeptical about the recipe at first wondering if flour was a mistaken missed ingredient but I went ahead and made as the recipe stated only I didn't have butter and used butter flavor shortening and didn't have corn syrup and used pancake syrup instead. I patiently waited to see how they were going to turn out and had flour on standby but didn't need any. I am pleased with the results. The cookies looked great coming out of the oven and held shape and taste wonderful. Will definately make this recipe again not changing the ingredients I used.

Delicious Ham and Potato Soup

Had it for dinner tonight. Perfect warm up food for a chilly night and very quick. Made the recipe almost as stated but omitted the celery and added more onions and ham. Husband topped his mug of soup with grated cheese. Might try adding other ingredients later for a variety of variations,but it is also very good the way it is.

Cool Rhubarb Iced Tea

Tried it as described. Doesn't taste good to me. 4 hours is too long to cook. Turns brown and tastes like molasses. Doesn't freeze solid. Use a spoon to get it out of ice cube tray. Stays on the bottom of the glass and melts then there is all the rhubarb pulp. Better off putting the cooked rhubarb in a jar and freeze or refrigerate and use as a spread on toast or english muffin.

Tasty Orange Chops

Was hoping I finally found something to make pork juicy or moist. Maybe where our meat comes from (where we live) is different than where you live. I used boneless pork sirloin chops and marinated overnight (plus more hours) and still dry.

Award Winning Soft Chocolate Chip Cookies

I have tried several chocolate chip cookie recipes. Not all are the same. Too hard,or to cake like and dry. These are soft and moist. I just halved the recipe. I didn't have vanilla pudding but had coconut cream and they turned out good. There is coconut in the pudding which goes good with the chocolate chips and walnuts. Will definately make again.
