Zucchini Spread

I have to rate this only four stars because I didn't like it, but it was easy to make and I brought it to work for a potluck and everyone loved it. I didn't bring any home. I wonder if cream cheese would be better than the mayo?

Downeast Maine Pumpkin Bread

This was a great recipe. I was able to make both muffins for work and bread for a family get together from the same batch. I didn't change a thing to the recipe and both got raving reviews. Both were super moist. I will surely use this recipe again!

Oma's Rhubarb Cake

This recipe was just what I was looking for. I followed the recipe just the way it was written too. Which is odd for me normally I like to add my own twists. But no chnages needed here. I shared this cake with a large group and everyone loved it!

Holiday Chicken Salad

I thought this recipe was so good. I needed to make a small amount so I eyeballed the amounts of everything and I didn't have the dried cranberries, so instead I used diced apple. and I also used orange bell pepper instead of green. It was as beautiful as it was tasty. I will surely make this again! And if your familiar with Penzey's spices, I used the Salad Elegant spice mix instead of just paprika.

Slow Cooker Sweet and Tangy Chicken

USE LESS BARBEQUE SAUCE, With a a few minor adjustments this was a great recipe. I took a few suggestions from other reviews and this is how I did it. First I only used 4 chicken breasts and one bottle of BBQ Sauce, but next time I think I might only use 1/2 the sauce. I did use a whole can of pineapple and most of the juice. The onion, pepper, and garlic I did according to the recipe. I did add water chestnuts, and would consider adding more veggies next time. My husband really liked it too, but said seasoning the chicken first would have made it better. I also only cooked it for 5 hours or so (cutting up the chicken after 4 hours) and the chicken was cooked perfectly in that time. I served it over rice and will surely make it again.

Bean Quesadillas

This Recipe was so good. I didn't even miss the chicken. I didn't use corn although I'm sure that would be good, and I added black olives. Even my husband liked it! I will surely make this again!
