This is a delicious, sweet way to serve carrots. We loved this healthy recipe. I added a few raisins.

I followed the directions exactly and the results were a delicious and very moist cake. We ate the first slices of cake warm and then put it in the refrigerator. It was excellent either way.

Cream Cheese Pound Cake

Reviewed: Apr. 17, 2010
Before making this cake, I read the article regarding making pound cakes. The advice was helpful to me. I sifted the dry ingredients together. I creamed the sugar, butter, & cream cheese for about 7 minutes before adding the eggs. I beat well after each egg was added. After pouring the batter in the tube pan, I tapped it against the counter top to remove any air bubbles. This produced an excellent pound cake that had a crunchy exterior and a velvety interior.

Cranberry Zucchini Bread

Reviewed: Aug. 13, 2009
I love this recipe. I had some cranberries in the freezer and used them in this recipe. The tartness of the cranberries added an excellent flavor to the overall sweetness of the bread. I'm making this again today. The loaves freeze well.

Honey Baked Chicken II

Reviewed: Nov. 14, 2010
My only change was to cut the butter in half. I spread the mixture over the chicken and really didn't need to baste as it stayed on the chicken. It produced very tender, moist chicken that everyone at my table enjoyed.

Warm Dijon Potato Salad

Reviewed: Mar. 21, 2011
We love, love, love this potato salad. It is so easy to make. I often add a couple of chopped hard boiled eggs and a little celery to it. It is great served warm but the cold leftovers are just as good.

Eileen's Meatloaf

Reviewed: Sep. 9, 2011
I was looking for something different in a meatloaf. I'm tired of the ketchup/chili sauce type. This fit the bill perfectly. I served it with mashed potatoes and brown gravy. Perfect comfort food for a rainy evening. I followed the recipe exactly and it turned out just right!

Outstanding pancakes! I used drained crushed pineapple and added a handful of shredded coconut. Adding zested orange peel enhances the orange flavor. These were a perfect tropical treat for our brunch.

Green Tomato Cake

Reviewed: Sep. 10, 2012
I HATE tomatoes and was unsure about trying this recipe. However, it was one of the best cakes I've had in a long time. It tasted like a carrot cake and everyone that tried it loved it. I made it with cream cheese frosting but plan to try caramel next time. Don't be afraid to try this.

This was a delicious chowder recipe. Very easy to prepare & the seasonings spiced it up delightfully. I did not use the jalepeno pepper and it was still great.

Cranberry, Sausage and Apple Stuffing

Reviewed: Mar. 17, 2003
This recipe was a wonderful change of pace to the traditional bread stuffing recipe that I've always used. I didn't have the Italian sausage so I used ground pork sausage and it tasted fine. I served this with a turkey breast and all the trimmings. My husband and picky father-in-law both loved it. Thanks. I'll be making this again.
