Gingerbread Cookies II

Reviewed: Nov. 1, 2002
Fantastic! My kids as well as the adults in the family loved this cookie. If they come out too dry, try cooking them for a minute or so less. The dough was easy to make, at the end it got a little difficult for mixing but once the dry ingredients were all absorbed it was a dream! Give it a taste test before you divide it up for the fridge. This was a really nice cookie, I will make it every year! Thanks Kim!

Amalgamation Cake II

Wow! What a cake! I made it with a blue ribbon white cake, also found here, and they balanced together beautifully! Delicious! Thank you for sharing it with us!

Mincemeat III

Reviewed: Feb. 28, 2004
This is fantastic! Wonderful taste! If you make it in a crock pot though, remember to cut down on the water a little, as mine came out just a little bit runny. That won't stop us from enjoying this great pie though! I strained all the canned items before including them. Once it was cured I baked it in a pie shell for 30 minutes at 350 F. Don't let the idea of canning scare you away from a good recipe. All you have to do to sterilize your jars is wash them in the dishwasher, then be sure not to touch the insides with anything that isn't sterile. There are a lot of good resources on the web that can help you.

Deep Fried Shrimp

Reviewed: Mar. 24, 2003
I have changed my review of this recipe. After having used it several times I noticed that the batter sticks to the bottom of the fryer's basket. The first (or maybe second on one of my lucky days) batch comes out fine, no problems at all. After that it's all downhill. Give the recipe a try, you might have better luck than me - I'm no batter guru to start playing around to see what I'm doing wrong. Thank you for the recipe anyway, it's always good to try new things :)

Nice and sweet! These cooked up in 11 minutes in my gas oven - watch them because they can burn quickly!

Butterscotch Pudding I

Wow! This is fantastic! Don't turn your back on it for a second though, or the cornstarch will lump. Came together very quickly and is almost gone now! Thanks for a great recipe!

Baked Onion Dip I

Reviewed: May 25, 2003
This is good, but as previously mentioned it is an oil producer. That doesn't really detract from the taste, but I might try cream cheese instead of mayo next time. Plus, I only had a white onion, so since I used 1 cup of the other ingredients I used 3/4 cup of onion.

Fried Mozzarella Cheese Sticks

Very good! We'll definitely have this again. I think I might double-dip them next time, the crust was just a pinch thin for our tastes. Thanks!

Cheddar Pennies

Reviewed: Nov. 12, 2002
The dough was a little too dry, I agree that it didn't want to roll up into a log and am not sure refridgeration would have helped. I think next time I will use a lot more cheese and up the pepper.

Watermelon Fire and Ice Salsa

Reviewed: Sep. 3, 2003
This is really good! I suspected it to be too liquidy from some other reviews, so as I chopped the watermelon I put it in a strainer until I was ready to mix everything together. This seemed to work well, it was still a little liquidy but no salsa I've ever had hasn't had any liquid :) Thanks Dawn!

English Muffins

Reviewed: Feb. 2, 2003
Good! I used half whole wheat flour, and cooked them in my electric skillet at 325. Had to keep the lid on to keep the 10 minute time but well worth it! The texture is similar to bagels, but it is still very good. Thanks!

Very good! I didn't have orange zest or mace, so I left the orange out and used Old Bay instead. We liked these a lot! Thanks!

Sausage & White Bean Soup

Reviewed: Nov. 23, 2010
I used a tube of sausage - the kind you would cut up to make sausage patties at breakfast. I also used three different kinds of beans: navy, great northern, and small white. I left out the thyme since I didn't manage to pick any up and I do miss the flavor of it. Other than that minor detail this is a really good soup. Nice textures and really great flavors.

Pine Nut Rice Soup

Reviewed: Nov. 23, 2010
Really interesting flavor on this - I used chicken stock for the first run but I think I might try water for the second. I put my rice and pine nuts through the food processor since I'm currently sans blender and liked the texture of the final mix so I think I'll just stick with that. I shared with a friend who kind of likened the flavor to something close to oatmeal. I'm not sure I quite agree - this is subtley sweet in a way similar to oatmeal, but it's also something quite a bit different. I will definitely be enjoying this again!
