I try a lot of Carrot Cake recipes as it is one of my favorite cakes! I can say that I really like this one! For the earlier comments on the cake colapsing, it is really important not to over mix the ingredients! Also let the cake stand in the pan for 10 minutes before removing to cool! The only thing that I modified was 1 cup fine sugar and 1 cup dark brown sugar and I grated some fresh ginger to give it a bit more flavor. I added as well almost 4 cups of carrots. This is a 'keeper'!
