Chef John's Ham and Potato Soup

I have made quite a few soups and have to admit that this wa an execellent one. I only made a minor change which was add an additional cup of chicken broth instead of one of the cups of water. Truly an excellent soup and will warm your tummy on a cool autumn . day. Thanks Chef John....now to look for other soup recipes you have on here.

Toscana Soup

I found this soup quite bland. If I ever make it again I will make it with chicken broth and not water, in order to add some flavour. I used some of the tips that people suggested but it only made a small difference.
