Apple Pumpkin Desserts

I made this recipe in a pie plate and it turned out well. Definitely serve this warm, it wasn't as good at room temperature. I used crushed graham crackers, as I did not have ginger snaps. It was pretty tasty, though kind of bland. I'd like to try the ginger snaps for some added flavor.

The Best Rolled Sugar Cookies

Delicious! My first attempt at sugar cookies. I followed the directions exactly, refrigerated dough for 1 hour, and only rolled out a small bit at a time, putting the remaining dough in the freezer in the meantime. Was easy to work with. I used powdered sugar instead of flour to roll it out, and used an unopened bottle of wine as a rolling pin. :) I'll make these again!

Ginger Carrot Soup by Jean Carper

I'm a huge fan of butternut squash type soups, and I found this to be a yummy, comfort-food recipe. Per other reviews, I only added 1 Tbsp of OJ, and that added plenty of orange flavor. I also reduced the half and half to 1/2 cup, and only used one yellow onion. I used regular 1/2 and 1/2, and fresh grated ginger. It was creamy and delicious! Make sure to puree in the blender well, so you get a creamy texture. I will most likely make this again.

Mango Papaya Salsa

This was amazing! The perfect sidekick for Jeff Calkins' blackened salmon fillets. I also served it to the in-laws as an appetizer by layering with softened cream cheese in a bowl and serving with crackers as suggested. Magnificent both ways! Will keep this one handy!!

Blackened Salmon Fillets

Because my husband is a fisherman, we tend to be fish recipe snobs... this was by far the best way we've found to cook salmon. We've already had it twice in the last week, and served it to the in-laws... FANTASTIC!! Definitely must use a cast iron skillet on the grill, though. We smoked up the house trying it on the stove.

Crab Pasta Salad

Delicious! I didn't add the peppers as hubby is not a fan. Used gluten free rice spiral pasta, and turned out wonderfully! Thanks for sharing!

Chicken Breasts in Caper Cream Sauce

I've made this many, many times and the results are always flawless. We forget in between how much we love this recipe. We've also tried it with fresh basil and oregano instead of capers and dill, and whatever herbs are used it's fantastic. Thanks for sharing!!

Shepherd's Pie VI

This recipe is also great with venison! I didn't mash the carrots, I used instant garlic mashed potatoes, and added 1/2 can of peas, 1/2 can corn. DELICIOUS. Hubby loved it. Will make again!

Cabbage Rolls II

Delicious with venison also! I didn't have worcestershire sauce, and the sauce was still good. This was my first attempt at cabbage rolls and I will make this recipe again!

Grandma's Green Bean Casserole

This is a solid recipe in that it cooks well and the flavors work well together, so I gave it four stars. However, it is a little too sour for my family's taste, so I'll go back to a traditional recipe.
