Fluffy Pancakes

Love these! I add 1/4 tsp cinnamon and 1/2 cup applesauce to the batter, I don't even need syrup! Yum!

No Bakes

Perfect! I do like my no-bakes a little less sweet, so I decreased the sugar to 1 cup. I also added my peanut butter to the chocolate mixture once it was removed from the heat, which made mixing much easier! Yum!

Zucchini Patties

Very good! Just a hint, fry these as soon as you make them. Otherwise, the salt starts to drain the water from the vegetables and you end up with a wet patty!

Broccoli Cheese Soup

Good! Pretty easy, I only added 24 oz of chicken stock (it was all I had!) plus one can of condensed cream of chicken soup and one can of water. Also didn't add the cornstarch at the end, and I used my immersion blender to puree the broccoli, which thickened it naturally.

Chicken Cordon Bleu II

Very good, I used prosciutto instead of ham, and didn't coat in the flour mixture. I used a cast iron skillet, so my chicken got a really nice crust on it. I didn't use wine in the sauce, instead used chicken stock, and added a heaping tablespoon of Dijon mustard to the cream sauce - perfect zip! Finished in the oven on 350 for 15 minutes.

Lentil Soup

Fantastic recipe, I didn't even know I liked lentils this much until I made them this way! I followed the suggestions and doubled the spices, added a few dashes of red pepper flakes, used only a 14 oz can of diced tomatoes, 3 cups vegetable broth and 4 cups chicken broth, 1 cup water. I also had a leftover smoked ham hock in my freezer, so I threw it in there too, YUM YUM YUM!!!
