Fancy Chicken Salad

It's delicious! When I first made it for myself, I couldn't stop eating it! After the first batch, I made the chicken salad continuously for almost a week until I ran out of the ingredients :)

Holiday Dressing

I took BAMATT's suggestions of lowering the amount of chicken stock to 3 cups and upping the temp to 350. Even then, the dressing came out really mushy - which I don't mind, considering this is my first try at homemade dressing. I don't own a food processor, so I ended up tearing the slices to small pieces and using a hand mixer to combine both cornbread and white bread. I added a little of the chicken stock to the bread mix in order to make it easier to mix. My final verdict on this - it's awesome. My only conundrum at the moment is figuring out how to reheat it for tomorrow's official dinner...

Honey Cornbread

It's utterly delicious! Not too sweet and very easy to put together! I used white cornmeal and kept everything the same. I also forgot to beat the eggs before I added it, but it's still pretty good.

Chicken and Dumplings IV

When I was growing up, chicken and dumplings was my favorite dish at school - but instead of actual dumplings, they had pasta noodles. Unfortunately, this experience has colored my opinion of this soup. While I absolutely thrilled with how the soup turned out, I wasn't too thrilled with the dumpling portion of it - it was too bland for my taste.

Quick and Easy Clam Chowder

Since I didn't have a crockpot, I made it stovetop. For me, clam chowder isn't complete without some veggies, so in addition to some reviewers' suggestions (double the cans of cream of potato and new england clam chowder, 1/3 cup -or more- of sherry) I added some grilled onions and celery to the mix. Talk about yummy!

Roasted Garlic Cauliflower

I used dried parsley instead of the fresh parley, since that was all I had on hand. Good recipe, but wasn't too thrilled with the way parmesan turned out.

Tomato-Topped Sole

I followed the recipe, though with some changes due to not having the correct ingredients on hand - garlic powder instead of garlic salt (1/4 tsp), dried instead of fresh parsley, swai fillets instead of sole/catfish. It still turned out pretty well, though my swai ended up needing an extra 5 minutes in the oven to bake. I can't complain over the end result - the onions started to caramelize, and ensured a rich, buttery taste. Definitely trying this again!

Egg and Sausage Casserole
