Too Much Chocolate Cake

Reviewed: Aug. 6, 2012
Super. I'm an American living in London so I my first problem was cake mixes are scarce, but my nearby large store did have them. I had to do without chocolate chips (as they come in tiny bags with high price tags) and thought I'd have to do without pudding (which they don't have here) but found one in the cabinet we brought from home. Oh the troubles I face here ;) I halved the oil and added a mashed banana. It was perfect. I also "Britishized" it by using 2 round cake pans and did a layer of jelly ("jam") in the middle and powdered sugar on top. It pained me to skip out on the frosting but actually this was delicious. Will def do again.

Best Peanut Butter Cookies Ever

Reviewed: May 9, 2012
I needed a little treat so I just made 1/4 batch (yes with 1/2 an egg)! Tasty but a little different without the flour. I would make them again. I would say they are VERY sweet - you need a huge glass of milk with them and probably should eat a head of broccoli after! I used slightly less than the sugar called for, but still a little too sweet - this may have been because of the pb I used. Thanks for the recipe!

Welfare Cake

Reviewed: Dec. 11, 2011
Very nice. I halved it for just me and my husband, and followed that exactly. I put it in a 8x8 pan which needed slightly less time than I gave it (30 mins). Just be aware it doesn't rise much. I decided to cut mine in half and make it into basically 1/2 a layer cake with frosting in the middle. Really enjoyed it and didn't miss the egg!

Honey-Garlic Glazed Meatballs

Reviewed: Dec. 8, 2011
Not my fave. The smell really put me off (I've never smelled anything like the sauce). My husband enjoyed them, and I did eat my share but I won't be rushing to make them again. I served them with white rice, and it had a kind of Chinese-y feel, but unfortunately, just not for me.

Greek Chicken Pasta

Reviewed: Aug. 26, 2011
Yum! I suggest double the tomato and onion, and add a few spoonfuls of pasta water. That eliminates any dryness but retains the original intent. We skipped the feta. Husband ate even more than usual!

The Best Banana Bread

Reviewed: Jun. 16, 2011
I'm enjoying a piece right now! So easy and delicious - one bowl! I used 1/2 c brown and 1/2 c white sugar. Meant to add cinnamon but forgot and don't miss it! I did add 3/4 c chocolate chips though! Very moist and tasty ... we'll see how much is left when my husband gets home from work!

Apple Banana Cupcakes

Reviewed: Jun. 15, 2011
Delish! I only had 2 apples to use up so I halved the recipe (and used no bananas) and made this into a small loaf. I used brown sugar instead of white and was too lazy to peel the apples before grating. Topped with glaze and this was easy, most, and delicious! Thanks for the recipe!

German Apple Cake I

Reviewed: May 24, 2011
Delicious. I didn't really measure the apples but I used 4 smallish older apples I had (grated), and threw in 1/2 a large banana (mashed) for good measure. I used 1/2 the oil, 1 tsp cinnamon and 1/4 tsp nutmeg, 1/4 tsp cloves. One batch made a regular-sized loaf and another smaller loaf. I added an icing glaze. I'm currently munching on a piece from the smaller loaf, and the regular sized one will be a thank-you for friends driving us to the airport this week. Thank you for this!

Aunt Johnnie's Pound Cake

Reviewed: May 18, 2011
Dee-lish! I'm an American living in England and I made this tonite for my church homegroup. These crazy English people had never heard of pound cake! I think they were a bit taken aback by how rich and heavy it is. Personally I thought this was FANtastic. First pound cake I'd ever made. I didn't have cake flour and didn't want to bother trying to make my own so used regular - it worked fine! I did the 1/2 almond 1/2 vanilla. You could def still taste the almond which was yummy. I used 2 loaf pans with one batch. Thanks for this wonderful recipe!

Oatmeal Cake III

Reviewed: Mar. 29, 2011
We loved this cake! I had some muesli/granola on hand so used that in place of the oats - I recommend trying that swap! Delicious. I still put the boiling water over them per the recipe to bulk them out and soften them. Even my mother-in-law loved it! ;)
