I got married in September 2006. I've lived up and down both coasts, but love living in NC now and plan to stay. I love to cook and love all the recipes and ideas I've gotten from this site.
My favorite things to cook
I am a pasta and shellfish fanatic(separately or together)! I also like to make different and interesting vegetarian dishes for the hubby.

Peanut Butter Kiss Cookies
I'm completely lost on the negative reviews of this cookie. This is one of the easiest, tastiest cookies I have ever made. I didn't change a thing in the recipe with the exception of extending bake time by 5 minutes, and I found the cookie to be neither granular nor oily. My husband, who isn't a sweets fan but loves peanut butter, thought they were amazing, too. AND THEY WERE SO EASY! They could literally be thrown together and baked while getting ready for work if I ever need to bring something in on the fly. Thanks so much for the recipe!

Suki's Spinach and Feta Pasta
I've made this dish more times than I can count. It's so easy and quick, but tastes restaurant quality. I sometimes replace the tomatoes with the sun-dried variety, and also sometimes toss in some cooked shrimp towards the end.

Roast Pumpkin and Feta Risotto
Absolutely delicious meal! The only changes I made were to use chicken broth instead of vegetable broth, and to increase the broth by 50%. It came out creamy and flavorful. My husband was gushing, which made it well worth the time it took to make.
