Best Bread Machine Bread

Reviewed: Feb. 14, 2015
Used AP flour for first 2 rounds. First go around I forgot the salt. Great texture, weird taste. Second go turned out much better. This 3rd time around using bread flour and putting the salt right beside the machine. Fingers crossed. Fantastic starter recipe. Lots of room to tweak it to your liking. Thank you.

Creamy Tomato Tuna Penne Pasta

Reviewed: Apr. 5, 2013
I had some real trouble finding the amounts in the recipe at the store, so I fudged a few things. 2 cans of tuna in olive oil came out to 9oz and the 2 cans of tomato bisque came out to 28oz and the penne was 12oz. With the extra tuna I halved the anchovy paste. In all both my DH and I loved the recipe. I also threw in a can of sweet corn and used the "veggie" penne to add some more veggie servings. Can't wait to make this for company. So quick and easy.

Cajun Shrimp Orecchiette

Reviewed: Feb. 10, 2013
The only changes I made was 1 tbs butter, 1 tbs olive oil and defrosted chopped spinach. Both my DH and I thought this dish was "meh." Not bad, but not to be put on the list to make again. I feel sort of like I wasted 1 lb of shrimp and a cup of good wine.

Chef John's Sausage & Shrimp Jambalaya Variation

Reviewed: Jan. 23, 2013
Followed the recipe exactly. By 45 minutes the rice was still crunchy. I even let it come to a boil before turning down to simmer. I let everything but the shrimp cook for a total of and hour and a 1/2, at least and the rice finally softened up. I recommend leaving out half the veggies till half the cooking time is past, so you get a little crunch from the peppers. I might even reduce the broth to 2 1/2 cups to make it closer to actual jambalaya, without letting it simmer for hours. I will use this recipe again, but with some changes.

Asian Lettuce Wraps

Reviewed: Jan. 17, 2013
Delicious! I too grated some carrots and used them as a topping and added saracha sauce to the mixture and left it on the table for my hothead husband. I would just buy romaine lettuce, so you get a better lettuce to filling ratio, not to mention the butter lettuce leaves get tiny fast and costs $1-2 more a head. Thanks for the great recipe.

Onion Rings with a kick

Reviewed: Apr. 27, 2012
Followed the directions exactly, but cut rings 1/2" thick. The batter was more like peanut butter and did not "drain" well, resulting in 50/50 batter/onion taste. I prefer 2/3 batter/onion. Next time I make this I will add 1/4 cup milk to thin the batter out. Maybe some accessory seasoning as well to give a kick, like cayenne pepper.

Italian Spaghetti Sauce with Meatballs

Reviewed: Apr. 7, 2012
Absolutely loved this recipe, only change we made was letting it simmer for another hour or so. It makes the sauce so much richer and flavorful.

Awesome and Easy Creamy Corn Casserole

Reviewed: Dec. 27, 2011
I only wish it were a little creamier, rather than cornbread with corn in it. I being from Arizona, have never heard of this stuff. At our Christmas party all the Southerners were silly excited that I had made corn pudding. The entire dish was scraped clean. No leftovers for us. :o(

Green Bean Casserole I

Reviewed: Dec. 25, 2011
The saltiness of the canned green beans added a "sour" element to the dish I did not care for. After adding much garlic powder, cheddar cheese and a ton of onions, it was still... off somehow. I will use the recipe from the French's container next year, or use my grandmother's recipe.

Restaurant-Style Buffalo Chicken Wings

My husband absolutely loved these wings. On a side note make sure you cut the wings apart. I had already dipped them in the flour when I noticed. The recipe is spot on.

Vicki's Hush Puppies

I rolled these guys like cookies to keep them pretty. My only problem was that they are incredibly dense. I like my puppies a little fluffier. Over all pretty tasty, although my husband requested more spice next time. :o) Thanks.
