Turkey Veggie Meatloaf Cups

Very easily adaptable, and yet still so good! I subbed shredded carrots for zucchini, corn for red bell pepper, and uncooked quinoa for the couscous. Add garlic for extra depth in flavor. Super quick and easy to make, and adjustable to your supply on hand!

Firecracker Grilled Alaska Salmon

Fantastic! I used my cast iron "grill" pan and it worked really well. I only marinated the salmon for 30 minutes max and still it was delectable. I poured all the marinade onto the pan with the fish. The skin was blackened to perfection - very tasty though maybe not the healthiest! I didn't have any peanut oil so I replaced it with some grapeseed oil and some more sesame oil. I also didn't have any green onions, but did use fresh ginger. I believe this recipe to be flexible, and therefore very easy to make! Try it with Sesame Pasta (Chicken) Salad, in place of the chicken. The Asian flavors combine sublimely. Thank you for a tasty and quick dinner recipe!

Sesame Pasta Chicken Salad

I just made this tonight along with Firecracker Grilled Alaska Salmon; both had an Asian flavor I was craving. This recipe is very forgiving, and thus will become a staple in my collection! I omitted the cilantro and green onions (didn't have on hand), used fresh ginger, and traded olive oil for the veggie oil (eyeballed amount), per another reviewer's suggestion. I also subbed some of the rice vinegar with yummy white wine. Since I used grilled salmon infused with it's own flavor, I could see why you'd need to season the chicken before adding it to the pasta. Overall, delicious! Just add more salt, fresh ginger, or sesame seeds to your liking. Thanks for a healthier pasta recipe!

Outrageous Chocolate Chip Cookies

These cookies are so good and so easy to make. I love that they don't call for shortening. I made 2 batches for refreshments at back to school night, and my students were so impressed! I was disappointed in one student's selfishness in eating 5! (but I guess that shows you how yummy they are!) The lesson is: make at least twice the amount called for!

Avocado Salsa

This is Deee-licious! I made this for my birthday party and everyone loved it. If you like avocados, then you'll devour this! Definitely allow it time to sit and soak in the flavors.

Lemon Sugar Tea Cookies

I LOVE eating these cookies when they come right out of the oven. They taste heavenly! Don't worry though, they still taste great even when they cool down. These cookies always impress and delight, though they seem quite simple. Even those not normally fond of lemons have loved these yummy cookies. Excellent :)

David's Secret Ingredient Chocolate Chip Cookies

Although this wasn't my favorite at first, it's the one I keep going back to...and besides, each time I make it people always love 'em and ask for the recipe! It has a really unexpected crunch that totally adds to these cookies' draw!

Hazelnut Chicken

So easy to prepare once you have all the ingredients. But I don't think that it's meant for 2 servings...more like 4! The Frangelico is really sweet so I think next time I'll use more brandy than the Frangelico. My mom who's not fond of chicken was thoroughly impressed and made it tonight for some of her friends!

Catherine's Spicy Chicken Soup

I just finished my last cup of this soup and I already miss eating it. It's so hearty and satisfying, even on a hot 90 degree day! I made my own chicken stock flavored with bay leaves, and I think that made it taste even better! I also added shredded cheese on each bowl of soup, and it just melts right in. YUM!!!

Basil Pesto Bread

Thank you for such a simple & delicious recipe! If you don't have time, you can just buy pesto (I used Trader Joe's). You can easily eat this alone as a light meal. It would also make great appetizers...just cut it into small pieces!

Tomato Pie II

What a unique dish! It's soooo yummy, especially with fresh tomatoes and basil from the yard! This tastes like a pot pie/quiche sorta concoction. The one thing I did differently was due to an accident. I forgot to add the fresh basil leaves so I had to dig up all the mayo 'n cheese to try to get the basil down with the tomatoes. SO I wound up with the basil some tomatoes and the topping jumbled up together...but it looked REALLY pretty and yummy when it was all cooked up cuz u could see bits of tomato and basil poking through the cheese! Add lots of basil. LOTS

Garlic Chicken

YUM! This was my first time baking chicken and it turned out great. I took someone else's advice and added some salt to the oil and garlic...but I could've added more cuz I like my food nice and tasty. Oh, and another thing I did was add the extra oil/garlic to the bottom of the pan (I used more oil and garlic then called for). Okay, one more thing: you can cheat a bit and make it more garlicky by using garlic infused olive oil!

Baker's Secret Pie Crust

I love this pie crust! It's pretty time consuming but sooo worth it. I've used this recipe three times so far. Once with the Glazed Apple Cream Pie, another time with some little strawberry mini pies, and tonight with Tomato Pie II. Each time has been dee-licious! Thanks for sharing =)
