The perfect amount! I modified slightly by adding only 1/2 c sour cream and a cup of cool whip.

Oyster Stew

Reviewed: Jul. 1, 2005
This was VERY good and easy. My husband didn't like as much because he wasn't crazy about the "floating" celery and onions, lol. But it was very tasty and the kids loved it.

Quiche (Southern Egg Pie)

Reviewed: Feb. 8, 2006
This was really good and a great way to use sausage differently! I told the husband it was southern sausage pie because he won't even try quiche! hee-hee.....he loved it! I tweaked this up a bit by using 1 lb. hot italian sausage[left out hot sauce and butter], added mushrooms, an extra egg and pimento. It made two pies...but they were way too brown, even after covering with foil.[ergo the 4 stars] Next time I'll use the 350 degree setting for the whole process.

Love it! I just loved it with twice the bacon and baked it in the oven. It's a heart-attack special, but heck! Who cares....you'll die with a smile!

THE Pasta Salad

Reviewed: Jul. 13, 2010
Delightful pasta salad! I left out the hot sauce and cut provolone into very thin strips because I was out of swiss, lol. Whole family LOVED it. I also used celery chopped fine and some bacon crumbles and garlic powder. Hahah...I may have made a different salad huh?

Extra Easy Hummus

Reviewed: Sep. 4, 2005
This IS super-easy!!! And very delicious! I took some other's advice and cut back the cumin to 1 tsp. and added a dash of parsley, chili powder, paprika and I used minced garlic from a jar. I also added sesame seeds[cuz I had em!] Needed lotsa bean juice to get the right consistency, so make sure you save it! VERY good alternative to the real deal, though the color was not my fav....but it didn't negate the taste, which was awesome! Thank You! OOooo...and lemon juice...the lemon juice I added was extra helpful I think with the flavor!

Pan Cream Puff

Reviewed: Jul. 3, 2007
I just had this last night....and I must say it was tres delish! I WILL say to use butter rather than margerine tho...and we skipped the chocolate and nuts. French Vanilla pudding is yummier than plain too! You can use sugar free and it's still awesome! Altogether a very nice little dessert that's versatile and not too sweet.

Walnut Cups

Reviewed: Dec. 22, 2010
LOVE these lil goodies. Only reason the four star rating is it seems to be lacking something that would make them phenomenal but I can't put my finger on it just yet. I will however, experiment with different fillings because the cups came out perfect! No paper liners for me...I just used, er "baking happiness" spray in my mini muffin pan. I feel like these need to be filled with chocolate and raspberry something, mmmmm. But as is, they are a sweet walnutty treat for sure! Thanks so much for the recipe!

I made this awhile back and forgot to review. It was a huge hit at the Bar-B-Q I brought it to. A good take-along dish that not everybody shows up with! Thanks!

Salsa I

Reviewed: Oct. 17, 2008
I used fresh tomatoes and added chopped fresh poblano pepper and a little cumin. I certainly did not use a whole bunch of fresh cilantro...OIY! That would be TOO much. I used about 6 stem's worth of leaves chopped fine. It was VERY good salsa.

Angel Hair Pasta Salad

Reviewed: May 24, 2006
This is a good start recipe. I added a pkg of seafood chunks in addition to the shrimp, some dill, fresh parsley, feta, etc. It tok A LOT of dressing tho. I used a whole bottle plus. It was great, don't get me wrong.....but the original recipe would have been very bland. Super idea tho....and easy to make your own.
