Cheesy Ham and Asparagus Bake

Reviewed: Apr. 24, 2003
I truly enjoyed this recipe, but the husband and teenagers weren't especially pleased. It was definitely too salty and I had added lots of mushrooms and my own selection of cheeses, which made it a hit for ME...but not them, lol. I would make it again for the girls, and omit the salt...but my family is strictly "meat and potatos".

Cheesy Ham and Hash Brown Casserole

Reviewed: Apr. 24, 2003
I made this with leftover Easter ham and it was yummmmmmmy! I couldn't get the family to eat it though, because they felt it was TOO rich, but I don't care...I want it all for myself anyway! Lol. I topped it with French's onion rings, which added some crunch. Next time I'll cut the recipe in half and make it just for me and my co-workers. The family will have to have burgers!

Mom's Macaroni Salad

Reviewed: Aug. 31, 2003
I hate cucumbers[lol], so I made this without them! I used 2 very large Jersey tomatoes and also added a tablespoon of chopped chives and sun-dried tomato flakes. (I also used white wine vinegar) It was AWESOME! A super recipe for tomato lovers.

I'm not a huge fan of biscotti....but I have Italian friends who are. They thought I did a fine job for a scottish girl. I dipped some in chocolate and enjoyed them with coffee...they were good.

My Mom's Sausage & Rice Casserole

Reviewed: Jun. 19, 2004
I just happen to have gotten a really good sale on Hatfield country sausage[buy 1/get 2 free]...so i was looking for something to do with it since we're not big breakfast people. OMG, was this good!....I crumbled and browned the tube of sausage for this recipe....added mushrooms....used canned chicken broth instead of pkg mix[i was afraid of the salt]...and topped it toward the end with French's cheese-flavored onion rings. MMMmmmMMMmmMMm!

Spinach Quiche

Reviewed: Oct. 18, 2004
I've misplaced my favorite quiche recipe, but this one looked similar enough to try and am I glad I did! It was delicious and the texture was exactly to my liking. I changed things up a bit...using chopped broccoli instead of spinach[tho I love it with spinach!] and swiss in place of the feta. It didn't last the night!!! Luckily, I got one piece before my 2 teenagers devoured the entire thing! I don't suppose I'll need to turn the kitchen upside down looking for my old quiche recipe, huh? I'm going to try this again next week with crumbled sausage in place of the spinach and add green and red peppers/monterey jack/cheddar. Mmmm.

VERY good!!! I used 1 pkg pf crescent dough and made 6 in a regular sized muffin tin. I skipped the worcestershire. They were amazing as luncheon fare and my teens were fighting over the leftovers! Definitely a keeper. Thanx!

Spinach Stuffed Chicken Breasts

Reviewed: Jan. 4, 2005
WoW! Excellent recipe...tho I had to change things up a tad. I did this recipe tonight for dinner but only had about a half a pkg of leftover spinach which I mixed with the mayo, and garlic, then I threw in a 1/4 cup of italian flavored breadcrumbs and 1/2 a cup of Italian cheese blend and a few shakes of parmesan[I didn't have any feta] I stuffed the breasts and laid the strips of bacon atop them. WoW...were they ever awesome! This is one of my new favorite chicken recipes. The whole gang LOVED it!

This is just like Mom's....a common Pennsylvania Dutch dish made with your leftover New Year's or Easter ham. You can add corn also and it's yummy. This is what I call comfort food!!!

Orzo with Parmesan and Basil

Reviewed: Jan. 27, 2005
I just happened to run across some tri-colored orzo on clearance and couldn't resist giving it a try. I can't believe how good this is! I took a few suggestions from other posters, using spinach and chicken boullion[because I didn't have any broth] and instead of basil, I used a garlic and Italian seasoning. WHAT A KEEPER! Next time I'm making it to go with the "Spinach Stuffed Chicken Breasts" I found on here.....they're amazing and this is perfect to serve with! BIG THANX to Dodie!
